You know how when you meditate or try and relax people always tell you to go to your happy place?

Maybe your happy place is somewhere familiar that makes you feel calm, or maybe it is somewhere like the beach, where you would go on a vacation.  For some reason I’ve always struggled with finding my happy place and I’m starting to think that is why I have such trouble completely clearing my mind sometimes.

Whenever I do try to meditate, I always automatically picture myself sitting in one of those wooden Adirondack chairs on the beach.  I’m not sure if it is because when I think of relaxation I think of vacation and then my mind automatically goes to the ocean or if it is because the ocean just seems like the cliche happy place to me.

I really do love the ocean and I had an amazing time when we visited Maui last year, but to be honest with you, the ocean also kinda of scares me.  When we snorkeled I refused to swim out far enough to see the sea turtles feeding at the bottom because I was scared that the waves would carry me away and as amazing as it was to see whales and dolphins up close, I counted down the seconds until we were back on dry land while we took our whale watching tour.  I really do love being at the ocean, but I don’t think I would say that it necessarily calms me down.

I’m now on a mission to find my new happy place!  Do you have a happy place?  If so, how did you decided that it was your happy place?  Do you go to the same place every time?  Do I sound like a crazy person talking this much about happy places?!  


You may be wondering how the idea of a happy place relates to this kale salad, so I’ll be happy (haha?) to tell you!  One of my favorite weekend activities is to sit outside in my comfy chair with a good book and a tasty lunch.  If I close my eyes it makes me feel like I’m sitting outside my beautiful home in the Hamptons.  Unfortunately, I don’t really have a house in the Hamptoms, but hopefully someday!  Maybe that will be my new happy place!

This salad combines so many of my favorite ingredients!  I also just realized that this is the third kale salad I have posted that involves roasted potatoes, which you should probably take as a good sign :)  They really do go so well together.  I haven’t cooked with radicchio much, but it is one of my new favorites and I really love the crunch.  I will warn you that it is a bit bitter, but if you soak it in ice water for about 20 minutes that takes most of the bitterness right out of it and leaves a really fresh flavor.

I loved the idea of grilling lemons for this dressing, not only because it is summer and everything should be grilled, but also because it brings out a really nice sweetness in them.  If you don’t have a grill you could just use regular lemon juice, but if you do have a grill, definitely go for the grilled lemon!

Kale, Radicchio, Roasted Potato & Chickpea Salad with a Creamy Grilled Lemon Vinaigrette
Recipe type: Salad, Gluten Free, Vegan
Serves: 4 - 6
  • I head of lacinato, or dino kale chopped into ¼ - ½ inch strips
  • 1 head of radicchio
  • 1 pound baby yellow potatoes, cut into small wedges
  • 1 15 ounce can of chickpeas, rinsed and drained
  • ¼ cup of roasted sunflower seeds
  • olive oil
  • salt
  • pepper
Creamy Grilled Lemon Vinaigrette:
  • ½ cup plus 2 tablespoons olive oil
  • ⅓ cup lemon juice from grilled lemons (Grilled lemon instructions below, you will need 3 - 4 lemons)
  • 3 tablespoons tahini
  • ½ teaspoon maple syrup
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  1. Pre-heat the oven to 400 degrees F. Place potato wedges on a large sheet pan and drizzle with a little bit of olive oil and season with salt and pepper. Place into the 400 degree oven and roast for 25 -30 minutes, until potatoes are crispy on the outside and tender on the inside.
  2. Cut the head of radicchio in half and cut out the core. Slice each half into ½ inch strips. Fill a large bowl with ice water and soak radicchio in ice water for about 20 minutes, this will take out most of the bitterness. Drain radicchio and pat dry.
  3. Slice three or four lemons in half. Heat a grill to medium heat and place lemons on, cut side down. Grill lemons for 5 - 10 minutes.
  4. Add all vinaigrette ingredients into a blender and blend for about 30 seconds until everything is combined.
  5. In a large bowl add kale, radhiccio, potatoes, chickpeas, and sunflower seeds. Pour dressing over and mix until combined.

    I actually don’t have a specific happy place that I go to, Izzy. I’d like to think it’s on a beach somewhere, but since I don’t leave near one, that never happens! :) I relax and unwind when I’m in the kitchen, so I think that would be mine for now. And this salad looks beautiful! I love the chickpea and sunflower combination. I could eat chickpeas all day, every day! And the vinaigrette sounds delicious, too.

      Hi Gayle! I don’t think I have a specific happy place either, but I do know that it involves being outside, but not in 100 degree weather! I like to picture myself outside with a blanket wrapped around me :) I don’t live near the beach either, so I usually just have to imagine myself there if I’m in the mood for a beach day! I could so eat chickpeas everyday too, and sometimes I do!

    I, too love the idea of grilling lemons for the salad dressing, how creative and summery! Not to mention that pinch of yellow is perfect. I also think potatoes in salad is just wonderful- I need a little carb to give me a boost and take me to my “happy place”, haha. I try to cut back, but roasted potatoes are my ultimate weakness!! And I think the chickpeas are perfect punch of protein too! Beautiful photo’s as always =) And of kitty.

      Hi Laura! I saw Bobby Flay grilling some lemons on one of his shows and I just knew that I had to use them for something! I’m always looking for an excuse to eat roasted potatoes :) Haha, yes I could use a boost to get me to my happy place too!     You ocean experience sounds much like my skiing experience. I love it, it is beautiful, it is fun, but it scares the crap out of me to go flying down the side of a mountain. I have visions of myself losing control and just tumbling down. Yeah, so not my happy place. Haha

      Haha, Cindy! I so want to like skiing and I have tried cross country skiing a few times, but I am still terrified of it and fall down all the time! When my husband and I were first dating I’m pretty sure we almost broke up on a ski trip once. Definitely not my happy place either! I think you would love this vinaigrette!!

      I totally agree, Monet! I’m a huge homebody and really just enjoy hanging out at home. There is nothing like traveling for a long time and finally coming back home, it is such a great feeling!

    Ohhhh girl…you’re “looking” at a woman who is in dire need of some meditation! I don’t do it nearly often enough….in fact, I can’t even tell you the last time I quieted my brain down and went to my happy place. Generally, in my fully-conscious state, my happy place is on a running or mountain biking trail…or drinking a glass of wine with friends. But you’ve inspired me to seek solitude and just let my mind shut off.

      I think I am in some dire need of meditation too! I bought a meditation CD a while ago and I sometimes listen to it before I go to sleep, but I still don’t seem to ever be able to fully quiet my brain. I’m starting to think it just isn’t possible! I’m with you on the outdoor thing, I always feel so peaceful when hiking or doing any outdoor activity, unless it is 100 degrees out and then it is the opposite of peaceful :) Sitting outside with a glass of wine sounds pretty peaceful to me right now!     i once made radicchio salad with griled prime wagyu, pretty dam delicious!!!
    bursting with flavour, never even try thought to grilled lemon before, sounds interesting and tempting to try!!!

    Love your question about our happy place. For me, it’s usually home but somewhere quiet and calm is what I like. I guess it isn’t necessary a particular spot but a mental state almost. And a good book and a healthy, satisfying meal like your salad alongside is definitely nice. I also love watching the ocean from afar but it scares me as well.

      Yes, definitely a mental state! I feel like I have trouble quieting my brain down sometimes, but I’m trying hard to work on it. I think that getting my perfect happy place will help with that! I think mine is at home too. There is something so memorizing about watching the ocean, but it can be scary up close!

      Thank you Lilli! I had actually never tried radicchio either, but I’m loving it now! It is pretty bitter when you first try it, but after you soak it in the water it is much milder. I hope you enjoy the salad and the radicchio :)

    My happy place is sitting on a deck with a cup of hot coffee with a blanket all curled up looking at the mountains maybe even a lake too!! Not that I’ve ever actually done this but someday! haha

    My happy place is all curled up on the couch in front of our fireplace. And I always picture those wooden Adirondack chairs on the beach as one of my happy places too :) .
    Love this salad! It looks so pretty! I love the sound of everything in here and it sounds amazing with the vinaigrette!
