I have a very important announcement to make: Summer is not over yet!!!  I know that it is labor day today, but the official last day of summer isn’t until September 22nd.

So, please do me a favor and put the pumpkin recipes and the sweatshirts away!  This might just be me feeling a little bitter when I hear other people talking about the changing leaves and the cooler weather, because in Tucson the only two seasons we have can be described as “Really Hot” and “Less Hot”.  So, on second thought keep the pumpkin recipes coming so I can live vicariously through you!

September is usually the time of the year that I start to curse the fact that I live in the Southwest.  Fall is one of my favorite seasons and before I moved out west, I was used to enjoying fall weather in September.  These days, come September, my mind is thinking jeans and sweatshirts and cooler evenings, but my body is still feeling hot, sweaty, and sunburned.

On a happier note, my wonderful husband bought me a spiralizer for my birthday!  I feel like I’m finally part of the awesome spiralizer club and nothing is safe from the jaws of my spiralizer!

It really is an amazing contraption and I would definitely recommend one to everyone.  It also gives me a great right arm workout, which is usually what  I buy a fancy cooking contraption to avoid, but vegetable noodles (and maybe even some fruit noodles!) are so much fun that is is totally worth it.  If you don’t have a spiralizer you can certainly still enjoy this dish.  Just chop the zucchini and squash up into bite size pieces instead.

I have a love/hate relationship with this pasta dish.  I love it because it is so good and gives me an excuse to use all the summer vegetables under the sun, but I also hate it because I cut myself worse than I’ve ever cut myself while chopping the vegetable noodles into smaller pieces.  I honestly think I might have had to go to the emergency room if my nail hadn’t gotten in the way.  The icing on the cake was when I ran into the bedroom doubled over in pain, Cheeto followed me in and proceeded to attack me!  I guess cats aren’t always the most sympathetic of pets…

Summer Vegetable Pasta Salad


  • Prep Time: 15 mins
  • Cook Time: 15 mins
  • Total Time: 30 minutes
  • Yield: 6-8
  • Category: Entree, Gluten Free, Vegan

Ingredients

  • 1 pound pasta, your favorite kind. I used brown rice pasta.
  • 1 medium sized zucchini
  • 1 medium sized yellow squash
  • 1 1/2 cup sliced cherry tomatoes
  • 1 1/2 cup corn kernels
  • 1/2 small red onion, sliced in half moons

Vinaigrette:

  • 2/3 cup extra virgin olive oil
  • 1 1/2 teaspoon dijon mustard
  • Juice of 1 lemon
  • 1 small handful basil leaves, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Bring a large pot of water to a boil over medium heat. Once water is boiling, add in the pasta and cook according to directions.
  2. If you have a spiralizer, spiralize the zucchini and the squash and roughly chop the “noodles” into smaller pieces. If you do not have a spirlaizer, chop the zucchini and squash into bite size pieces.
  3. Heat a large pan over medium heat and coat the bottom with olive oil. Throw in the zucchini, squash, red onion, and corn kernels. Season with salt and pepper and cook for about 5 minutes. Drain out any water the appears and place vegetable mixture into a large bowl.
  4. Drain the pasta and add into the bowl along with the tomatoes.
  5. In a small bowl add all dressing ingredients and mix together. Pour dressing over pasta mixture and add more salt if needed. Top with chopped basil leaves and red pepper flakes, if desired. Add extra salt and pepper to taste

    Haha you can live vicariously through me because the cooler weather has definitively settled in here in Belgium! I am not going to lie, I am tots jealous of the hot weather you are having!! 😀

      Hi Ceara! It was 105 degrees here today and I started sweating like crazy every time I even walked outside. So, you are not missing anything unless that sounds fun to you! I would take your cooler weather in a second!

      I had been eyeing those spiralizers for months and I’m so happy I finally got one! It just makes vegetables more fun to eat! I hope you had a great weekend :)

      Thank you Katie! It was a high a 105 today and, unfortunately, shows no signs of cooling down anytime soon. I’ll keep my fingers crossed and in the meantime I’ll keep enjoying all the yummy summer foods :)

      Thanks Joanne, me too! I think I would have ended up in the ER for sure if it hadn’t been there! I was almost in too much pain to keep going, but I was so hungry I made myself finish it :) By the feel of the weather here, I might be posting summer recipes for the next few months!

    Ditto on trying to use up all those summer veggies which is why I think this dish is fabulous! No spiralizer here but I have a fall birthday so you never know. Sorry about the heat in Tuscan, too bad you don’t get that lovely fall weather. But then we have to shovel snow and lots of it later so I guess there’s a trade off.

    And that cat, well, what can I say, cats can be so troublesome =)

      You should totally put a spiralizer on your birthday wish list! They make eating vegetables so much more fun! I think I need to move to New York because I really do miss the cool fall weather and watching the leaves change is one of my favorite things to do. I do really hate shoveling snow and driving in bad winter weather though, so I guess it is a trade off!

      Haha, they really can be so troublesome, but their cuteness lets them get away with so much :)

      I had been on the fence about a spiralizer for a few months and I think I’ve used it almost everyday that I’ve had it! They are so worth it and are also fun to use :)

Though I’m excited for the cool weather and everything apples and pumpkins, nothing is being posted to my blog that is fall-like for another three weeks! :) This looks like the perfect pasta salad to relish the last few days of summer with. The zucchini and squash sound like the perfect veggies for this dish!

    Spiralizer is totally on my wish list too! I really want to try it as a pasta substitute. When I want to cut down on carbs or calories I use shirataki noodles but sometimes I just can’t get past the weird texture!

      You have to get one, Maris! They make eating vegetables so much more fun! I’ve never heard of shirataki noodles before, I’ll have to look them up! Zucchini noodles are one of my favorite pasta substitutes so far :)

    I’m ashamed to admit that I have already pulled out my sweatshirts, AND my cans of pumpkin, AND a ton of apples. But hey, I live in Wisconsin so you can’t blame me for that! LOL. One thing I’m still holding onto yet, is summer salads. This pasta salad looks ah-MAZING, Izzy! All those gorgeous veggies in a vinaigrette and lotsa’ pasta sound like the best match ever! P.S. Totally jealous of your spiralizer! Not jealous of your cut though. Ouch!

      Haha, I would do the same if I lived in a cooler climate! I did pull a sweatshirt out the other day, but only because the air conditioner was on really low, haha! I don’t ever want to let go of summer salads either! I guess I will just have to think of some good winter salads. You need to get a spiralizer, Sarah! You will go crazy with it :)

    Your cat is so cute! Thank goodness for your fingernail or that cut would have been much worse. Ouch! Love this pasta salad. We have had the hottest weather this last week. Definitely still feels like summer and this salad would make a wonderful light meal!

    Oh man, that looks like a horrible cut! And then to get attacked by Cheeto just makes it that much worse. I’m sorry, I had to giggle a little when I envisioned him doing that to you. Maybe he thought you wincing in pain means you want to play? Mysterious kitty.

    Anyway, I hope your finger and your cold heal up ASAP! In the meantime at least you had this gorgeous pasta to hang on to the last days of summer with. :)

      Haha, it’s ok! I had to laugh a little too! He knows not what he does, I guess… haha.

      The finger is all better and the cold is almost all better! Unfortunately, it is still 100 degrees, so I’m still enjoying this summer pasta, at least for a few more days :)

    So it never gets cold in Arizona??
    It’s a bit like that here in Australia … it gets a little cold at night but not really during the day … not compared to the UK, anyhow. Seems weird for sure and I know what you mean about appreciating the arrival of Autumn .. and missing that!

      Haha, I wouldn’t say that it gets cold, but it does get cooler. It is a very rare occasion that we get snow, but I do get the break out my jacket a few times during the winter. I have faith that someday I’ll live in a place that gets a proper winter :)

    Oh… I hope your finger is better after that cut! I guess that comes with the territory, eh? I grated my thumb last week on a microplaner attempting to shred all the zucchini I had! That was awful! How exciting to get a spiralizer for your birthday! Yeeee!!! This salad has my favorite end of summer ingredients and the dressing with the dijon and lemon… mmmm ummm!
