Today has been a day full of waiting, and as much as I would like to pretend that I am a patient person, I’m really not.  I had an appointment at the stomach doctor this morning and somehow I managed to pick the stomach doctor that has an office that is so far away from my house I swear I was halfway in Phoenix!

Stupidly, I decided to just use my GPS to get me there without even looking at the route on Google Maps first.  I was hoping to avoid both the busy downtown area and the freeway, but my GPS decided to send me through both.  Needless to say, I got lost a few times and screamed at the GPS until I came to my senses and realized that it wasn’t going to apologize.

I then finally made it to the doctors office, in what seemed like three hours later, and I walk into the office and there are literally like 20 people sitting in the waiting room.  I guess stomach issues really are prevalent these days! 

For some reason I thought it would be a good idea to schedule a doctors appointment and an oil change on the same day, so after the appointment I headed straight to the automotive center which is notorious for long waits.  Thankfully it also happens to be located at the mall, so I hit up Old Navy and bought some really cute shirts!  I guess there is always a silver lining :)

I’ve been dreaming up these chicken patties for sometime now, and although I really just wanted to sit in front of the tv for hours after I got home, I didn’t want to keep you waiting any longer for this recipe!

If you’ve been reading my blog for a while now, you may be thinking that I am a little bit burger obsessed these days.  And you would be 100% correct!  First there were these awesome sweet potato burgers, and then I made these addicting roasted beet burgers, and now I am presenting you with these vegan chicken patties.

I used to be pretty obsessed with those fake chicken patties that you can buy in the “healthy” part of the freezer section.  I would eat them between a bun, on salads, in pasta, and even in tacos.  They were pretty much my BFFs and I always made sure I had a few boxes in the freezer.  But, unfortunately, I had to give them up once I gave gluten up because they are not gluten free, and I’m pretty sure they aren’t vegan either.

Since then, I’ve been dreaming of a gluten free fake chicken patty (as I so affectionately called them).  I’ve been pretty pleased with my veggie burger method of using brown rice, beans, and some type of roasted starch or vegetable.  To make these chicken patties, I cooked my brown rice in vegetable broth and then blended them up with chick peas and white sweet potatoes.  Have you ever used white sweet potatoes before?  I usually prefer the bright orange sweet potatoes which are much sweeter and less starchier than white sweet potatoes.  But, I didn’t want these chicken patties to be sweet and I also wanted to keep them a whitish color.  I then coated them in bread crumbs and heated them in the skillet with a little bit of olive oil to give them a crispy crust on the outside.

If you’ve made any of my other veggie burgers they have a very similar texture.  They are moist and soft, and they do hold together really well.  I hope you are as burger obsessed as I am these days :)

Vegan "Chicken" Patty Sandwiches
 
Recipe type: Entree, Sandwich, Gluten Free, Vegan
Serves: 6
Ingredients
  • 1 cup cooked brown rice that has been cooked in vegetable stock
  • 3½ cups diced yellow sweet potatoes
  • 1 - 15 oz can chickpeas, rinsed and drained
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Old Bay seasoning
  • ¼ teaspoon dried oregano
  • ¼ teaspoon celery salt
  • ¼ teaspoon paprika
  • ½ teaspoon nutritional yeast
  • ½ teaspoon dried thyme
  • A few dashes of Tabasco sauce
  • salt
  • pepper
  • olive oil
  • 1 cup bread crumbs, gluten free if necessary
  • 6 hamburger buns
  • Optional toppings: lettuce, tomato, onion, mayo, mustard, ketchup
Instructions
  1. Pre-heat the oven to 400 degrees F. Place the diced sweet potatos onto a large sheet pan and drizzle with olive oil and season with salt and pepper. Toss to coat. Place sweet potatoes in the oven and roast for about 25 minutes, until potatoes are tender. Let cool for ten minutes.
  2. In a food processor, add the brown rice, chickpeas, roasted yellow sweet potatoes, and all of the spices. Turn the food processor on and process until all ingredients are combined, but not for too long or else the mixture will get a little gummy due to the yellow sweet potatoes. You want the mixture to be a little chunky.
  3. Place the bread crumbs on a large plate. Form the mixture into patties and then place patties in the bread crumb mixture and press down in order to make the bread drumbs stick to the patty. Make sure all sides of the patties are coated.
  4. Heat a large skillet over medium heat and coat the bottom with olive oil. Make sure the olive oil is hot before placing the patties in. Cook for about 3 minutes on each side until patties are browned.
  5. Place patties in buns and top with desired toppings.

    What a full day you had… and then to come home to Cheeto and his furry demands (ohhh those kitties). Sounds like your evening ended on a good note with this delicious recipe. I know exactly what ‘chickn’ patties you’re referring to. I haven’t had one in a looong time, but do crave them! I need to give these a try.     I HATE waiting, especially if it’s at doctor’s offices! Why can’t everything/everyone just be on time?

    How are you supposed to get anything done with such a demanding kitty? I get pretty frustrated when I have to wait for things when I have an appointment. Like 5 minutes, no big deal, but one of my doctor’s offices has a sign up asking patients to wait for 30 minutes before they even say anything about the wait. Seriously? In no other world is that okay! Clearly I’m all riled up — let me call down with a “chicken” patty. those frozen ones used to be a favorite of mine, too.

      Haha, I really don’t get much done with Cheeto around! OMG, that is crazy, 30 minutes before they are allowed to complain?? I guess they figure that people are gonna come anyway so they can do whatever they want, it is too bad! It better be a damn good doctor! Now I’m all riled up too, haha!

    Well, these chicken patty sandwiches look delightful- although I have never heard of a white sweet potato before so I will have to be on the lookout!! We have eaten our share of chicken patties, it’s what my husband gets at school when I forget to pack his lunch! hehe. But your spin looks so much healthier and delicious.

      It really is agony, Laura! And I have to wait over a month just to get a few more tests done, ughh!

      I was never very familiar with them either, but once I sent my husband out for sweet potatoes and he brought home this whitish colored sweet potato that wasn’t really sweet at all. I googled it and sure enough there are a few different sweet potato varieties! Chicken patties, both veggie and regular, have always been my favorites!

    So do these patties taste anything like chicken at all or do they just look like chicken patties? Whichever, they look and sound delicious … mmmm. I think since starting to read all these blogs with beautiful veggie food on them, I’m at risk of becoming a sort of closet vegetarian!

      Thanks Helen! I would say that they do taste like chicken, but my husband might dispute that, haha! I tried to use savory herbs and spices that you would use on chicken so to me, it really does remind me of chicken! You should become one! I actually do eat some meat, but I’ve found that I really prefer eating and cooking veggie dishes! I feel like I can get a little more creative with them :)

    I may be totally behind, but I don’t think I have ever heard of a yellow sweet potato. Maybe I just haven’t been paying attention?!
    These look just like real chicken patties! I would have never guessed they are vegan!

      I had never really heard of them either until I sent my husband to the store for sweet potatoes and he came home with these things that were shaped like sweet potatoes, but were yellowish and not very sweet at all. They kind of remind me of regular potatoes more than sweet potatoes, but I am a lover of all kinds of potatoes! They work really well with these burgers :)

    These “ficken” (what I call fake chicken, haha!) patties sound delicious! My mom and sister are both vegan, so I cook them lots of veggie burgers when they come over. Can’t wait to try this version!

    Oh I hate hate hate waiting! I’m so impatient! The only thing I don’t mind waiting for is food that’s cooking/baking. I love the anticipation :-) These vegan chicken patty sandwiches look amazing!

      I hadn’t made my own until a few months ago, and now I can stop making them! They, of course, don’t taste exactly like a real chicken patty, but with all the seasonings they taste pretty darn close!

    That sounds like one heck of a day Izzy! Why is it that running errands and drs appts allwaysssss take longer than necessary! A stop to shop makes it more bearable though :) Hope your stomach problems are solved very soon and you are feeling better.

    I’m just as burger obsessed as you are so I would love these!! And I was wondering what those light colored chunks were in the food processor. White sweet potato- how interesting! I’ll have to keep an eye out for one and give these a try!

      The new shirts really did make me feel better! I think I might have a slight shopping problem :)

      I sent my husband to the grocery store a while ago for sweet potatoes and he picked up these white ones and we were both so confused, haha! They aren’t quite as sweet and they kinda remind me more of regular potatoes than sweet potatoes. I’m really enjoying them right now and they are perfect because my love sweet potatoes and my husband loves regular potatoes, so they are the perfect compromise! And they work really well in these burgers :)

    Doctor’s offices are the worst, aren’t they? I’m glad you were able to improve your day with these delicious-looking burgers! I have never heard of sweet white potatoes, but definitely want to check them out. And I bet the Old Bay seasoning tastes amazing!

      They really are! Lots of waiting and there usually isn’t a good reason why you are there! I like the white sweet potatoes because they are kind of a mix between potatoes and sweet potatoes, which is pretty perfect to me! I love Old Bay and put it on almost anything!     OMG I just spent 1 1/2 hours waiting to see my doctor the other day and it was standing room only and I had the brilliant idea of bringing my 1 year old daughter with me (soo, soo dumb) just to talk to a doctor for 15 minutes…don’t get me started..anywho..these burgs look amazing! So much better then store bought for sure.

    FYI I finally got my hands on a spiralizer and made a veggie salad..since your Summer Veggie Past post I’ve been on a spiralizer mission!!

    I just made these and they are awesome!! My wife and I loved them from the first bite. Thank you for putting in the work to create and then post this recipe. My wife and I are vegan and, apparently, were vegetarian for a while (without realizing) because we also loved the frozen ones, always had them on hand and used them with the same things you did. We’ve eliminated those over 2 years ago and haven’t found a suitable replacement until your recipe. I had everything on hand for these except the yellow sweet potatoes… so I substituted with golden potatoes, rather than a trip to the store for one item. Next time I’ll use the yellow sweet. One question I had was whether there is a way to firm up the middle of the patties during cooking? They were fantastic flavor but a little softer texture than the outside. Maybe the golden potatoes had too much starch and kept them soft? Either way, this is now a regular recipe we’ll be having. Thanks again and hope to hear a reply about the texture.

      Hi Chris! Thanks so much for the wonderful comment!! It just made my day! I’m so glad you and your wife liked them! I do remember them being a little bit soft on the inside, but I would recommend refrigerating them a little longer, maybe even overnight to firm them up a little bit. The yellow sweet potato also might help a little bit too. Or you could also try them make them a little bit thinner so the inside cooks up a bit more and becomes a little firmer. I hope that helps! What hamburger buns do you prefer if you are vegan AND gluten free? Do you make them yourself or do you have a brand that you like? Thank you!

      Hi Jennifer! I’m not strictly vegan although I do like to eat dairy free as much as possible, so I mostly use Udi’s gluten free buns that do have egg whites in them. When I was a little stricter with my diet I would use gluten free vegan bread if I could find it. I’ve been thinking about trying to come up with my own bun recipe that is both vegan and gluten free, so hopefully I will get that done soon :)
