You guys! Have you heard of this powdered peanut butter thing?? I first heard about it a while ago and kinda passed it off because usually I try to steer clear of most things that are low fat that probably shouldn’t be low fat. Then I finally saw a bottle of this at a camping store and I decided to give it a try.
If you aren’t familiar, powdered peanut butter is basically powder made from peanuts that have had most of the fats and oils pressed out of them and then been dehydrated and made into a powder. You then add a little bit of water to the powder and mix up your own peanut butter. Depending on which kind you use, it contains 85-90% less fat than normal peanut butter as well as much fewer calories (only about 45 per serving). As a huge peanut butter lover who has been known to eat about five tablespoons in one sitting and then scream when I realize how much fat and calories I just consumed, I was very excited about the idea of powdered peanut butter with much less fat!
I’ve done a bit of research about powdered peanut butter and different brands and I find that there are some strong opinions, both good and bad. I was able to find an organic, non-GMO, version that was made with organic coconut sugar and have been very happy with it. When made into peanut butter, the texture isn’t exact and I’ve always been a crunchy peanut butter kind of girl, which I can’t get with this stuff but I can eat it by the tablespoon and feel a little bit better about myself. I don’t think I will be throwing out all the regular nut butters in the house anytime soon, but it is a nice option when I feel the need to go on a peanut butter rampage!
I’ve used the powdered peanut butter in a few different recipes so far (these homemade peanut butter cups being one of them!), but these peanut butter and banana milkshakes are my absolute favorites! I fell in love with banana ice cream when I made my Peanut Butter & Banana Ice Cream Sandwiches and I’ve been making it ever since. These milkshakes are not only low in fat because I have used the powdered peanut butter, but they are also vegan because they are made with frozen bananas and almond milk rather than real ice cream. The texture is perfect and they are so easy to make!
- 4 large ripe bananas
- 1½ cups almond milk
- 3 tablespoons powdered peanut butter, or more for a more intense peanut flavor
- ¼ cup pure maple syrup
- ½ teaspoon vanilla extract
- Line a large baking sheet with wax paper or parchment paper. Peel bananas and cut them into ½ inch slices. Lay slices on the tray and freeze for at least two hours.
- Add frozen bananas plus the rest of the ingredients to a high powered blender and blend until milkshake consistency is reached. You may need to stir the mixture in between the blending process to make sure everything blends properly. Additional almond milk may be needed depending on desired consistency. Serve immediately.
- Recipe makes 2 large milkshakes or 4 small milkshakes.
