Chilled Cherry Tomato Soup! All your favorite summer flavors in one bowl! This chilled soup is the perfect way to keep cool this summer!

A big bowl of piping hot soup probably isn’t the first thing that pops in your head when you think of Summer, so instead we are eating a big bowl of chilled soup because we need to get our soup fix even though it is 100 degrees outside!  This soup does require the turning on of the oven, but only for a few minutes and it is totally worth it!

This blender has become one of my favorite kitchen tools lately.  It is so powerful that it liquefies pretty much everything I put into it and I think that is pretty cool!  I use it to make my favorite ice cream sandwiches and it whips up this vegan ranch dressing in seconds!

All that is required for this soup is for you to roast the cherry tomatoes, saute up some onions and garlic, and then throw it all in the magical blender and you have silky cherry tomato soup in about 1 minute!  It is perfect for a light lunch or dinner on a hot summer day :)

Is anyone out there doing anything fun this summer?  I feel like I should be out camping and hiking and enjoying things like I did when I was a kid, but instead I’ve been holed up inside watching lots of Netflix and taking afternoon naps.  And, I’m a little bit embarrassed to admit that I’ve been enjoying every second of it!

I would love to hear about what you all have been up to this summer!

Chilled Cherry Tomato Soup

  • Yield: 2
  • Category: Soup, Gluten Free, Vegan

  • 5 cups cherry tomatoes
  • 1/2 chopped yellow onion
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 3 tablespoons chopped fresh basil
  • Olive oil
  • Salt
  • Pepper

  1. Pre-heat the oven to 400 degrees Fahrenheit. Place the cherry tomatoes on a large oven sheet lined with parchment paper. Drizzle with 1 teaspoon olive oil and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Roast cherry tomatoes until they are starting to burst open, about 15 minutes.
  2. While tomatoes are roasting, heat a pan over medium heat and add 1 teaspoon olive oil. Then add the chopped onion, dried oregano and a pinch of salt and pepper. Cook onions until translucent, about 5 minutes. When onions have about 1 minute left of cooking add the minced garlic and stir.
  3. Let the tomatoes and onions cool for a few minutes. Then add them to a blender along with the fresh basil and blend for 1-2 minutes, until silky and smooth. Place soup in the refrigerator until chilled, about 1 hour and then serve

Afternoon naps sound pretty good to me! I’ve been chasing my kids around this summer, and heading to the park or pool most days. This soup looks delicious, and perfect for summer. My kids love tomatoes, and I think they would love this soup too. :)

Heading to the pool sounds almost better than napping! I’ve only been to the pool once this summer and I really need more pool days in my life! That is awesome that your kids love tomatoes, I think I hated them as a kid, haha!

Thank you so much, Natalie!! I’m so jealous of your cherry tomatoes! They are so expensive at the store but I love them so much! Maybe you can just send me some :)

This sound awesome! I love that you made it with cherry tomatoes because they definitely have the best flavor of all the tomatoes. Especially if you can round up some locally grown ones. Yum! Best thing about summer! :)

They really do have the best flavor ever!! I need to start growing some of my own because I can eat them like candy! Or you can just send me some of yours :)

Even though I can eat hot soup when it’s 100 degrees out, this chilled soup sounds just perfect! I’ve actually never tried a chilled soup before! I definitely need to change that because this sounds amazing. Gorgeous pictures, too!

I could probably eat hot soup in the summer, but only if I was sitting inside some very cold AC! If you love hot soup, you will love chilled soup, Gayle! Thank you :)

No shame in hanging out with Netflix! Sounds lovely, Izzy! As does this soup… hot or cold, I’m into soup all year round. Looking forward to our local tomatoes coming in to enjoy this! Yay on the blender! It’s fabulous!

You know, I never tried chilled soup until I had a food blog and I actually love it! It’s really light and refreshing. This version sounds simple yet perfect!

And I was just about to finally plan a hike this weekend but it’s been cold and gloomy so I will likely be inside watching movies too. Hey, as long as there’s good food to eat, I’m happy! :)

I don’t think I had either, haha! It sounds kinda strange, but it really is so refreshing!

Our monsoon season just started so we have been getting thunderstorms every afternoon, but it still seems to be hot! I’m glad you guys were finally able to get out and go on your hike :) And, I have been eating way too much food while sitting and watching tv, lol

That is so nice you can take the kids to the park! I wish it was park weather here, but I think we still have a few more months, haha! I’m trying to get all the naps in that I can before we think about having kids because I know they won’t be possible then! Thanks Kelly!
