These Southwest Tofu Scramble Breakfast Tacos are a perfect vegan breakfast packed with protein and flavor!

I have no idea when or why it started, but my husband and I have this running joke where he asks me what is for dinner and I say, “tofu scramble”.  He then makes a face and says something like, “ew” or “gross”.  But, up until I made these Southwest Tofu Scramble Breakfast Tacos, I’m pretty sure he had never once tasted a tofu scramble before.

I feel like tofu in general gets a bad rap and the idea of a tofu scramble might even have a worse one for some people.  I grew up eating tofu so I’ve always loved it, but I do know that it has to be prepared and seasoned correctly in order for it to be enjoyable.  And, trust me, this Southwest Tofu Scramble is packed with tons of delicious flavor!

I didn’t end up making my husband eat this for dinner, but I did serve it to him for breakfast and these were his words after he ate it, “So, that was tofu and not eggs?”.  He might not be the most observant person, but I definitely took that as a compliment, haha!  And, he ate these tacos for breakfast all week long.  These breakfast tacos are a great way to add some extra protein and flavor to your day!

Southwest Tofu Scramble Breakfast Tacos


  • Prep Time: 10 mins
  • Cook Time: 25 mins
  • Total Time: 35 minutes

Ingredients

  • 3 teaspoon olive oil, divided
  • 1/2 large red bell pepper, diced
  • 1/2 large green bell pepper, diced
  • 1/2 cup diced red onion
  • 1 (14 ounce) block extra firm tofu, drained and patted dry
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon granulated garlic
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon curry powder
  • 1 (15 ounce) can pinto or black beans, drained and rinsed
  • Corn tortillas for serving
  • Optional garnishes: sliced scallion, salsa, cilantro

Instructions

  1. Heat a large pan over medium heat and add 1 teaspoon olive oil, the diced veggies and a pinch of salt. Cook veggies for about 5 minutes, until tender.
  2. Next, push the veggies to the side of the pan and add 2 more teaspoons olive oil. Crumble the block of tofu into the pan, using your hands, and add all of the spices. Stir everything together and cook until tofu is starting to brown, 10-15 minutes. Finally, add the beans, stir and cook for 2 more minutes, until beans are heated through.
  3. Serve tofu scramble by itself or in a breakfast taco. Top with green onions, salsa or cilantro, if desired.

    I’ve never been too much of a tofu person, but I love that it absorbs flavors so well and it’s so versatile! I think I could handle it here with all of this Southwest goodness, too!

      These tofu tacos are so flavorful that I don’t even think you would realize that you were actually eating tofu!

    That’s so funny! I feel the same way as your husband and am usually turned off by the idea of tofu scrambles but I’ve never even tried it! I think I just like regular eggs so much that it’s hard for me to replace them with tofu. BUT I am a firm believer that you can’t knock something until you try it and I have faith that these tacos are just as good as you say they are. I’m definitely going to give them a try!

      You have to try one, Sarah! I know you would love it since I’m pretty sure we have similar taste buds :) Regular eggs are good too so it’s best not to think of the tofu as replacing them, haha! It’s just something different :)

    haha sounds like my husband … I was testing a recipe the other day and wanted to see if he could tell the difference since it was vegan (and not normally!). He had no clue – I take it as a compliment though!! :)

    I’ve never had a tofu scramble but this really looks and sounds delicious!

    Haha, that joke with your husband sounds like one I would have with mine. I don’t think I have ever actually had a tofu scramble either, although I do like tofu. These breakfast tacos look so good!

    That definitely sounds like a compliment to me! I’ve never tried tofu before, but I definitely think I could eat it this way because I love breakfast tacos!

    I love it when that happens! Surely he enjoyed it if he was eating it for breakfast throughout the week! Tofu scrambles are sooo flavorful with such good texture. I’ve only had them when eating out… and have never made my own. I’ve gotta give it a go! Thank you for this, Izzy!

      He really did, Traci! I probably could have just said it was eggs and he wouldn’t have questioned it, haha! You should make your own, I think you would love it!
