 Despite the 100 degree weather, today has been a good day!  We went thrift store shopping, snuck into a local hotel pool and went out for dinner at our favorite restaurant.  By the time we got home Eli was completely worn out and went down to sleep without even making a peep.  Now we get to relax and watch the NBA finals. 

Normally I’m not a big sports person, but I do get into professional basketball.  I hope you all have a nice relaxing weekend planned!  I also hope you enjoy the meals we have for you this week :)

Cashew Ricotta Spinach Stuffed Shells from Making Thyme for Health

Prep Ahead Tip: Pasta Salad can be made up to 2 days ahead of time if desired. Vegetables can also be chopped up to 2 days ahead of time.

Vegan/Gluten-free Substitutions: Recipe is already vegan. Use gluten free pasta and gluten free tamari to make gluten free.
