Happy Thursday!  This has been quite the week.  We got back from our trip to Iowa last week and I kept saying how I would be really surprised if our 8 month old didn’t end up sick, but a few days went by and he seemed good.  Then, all of a sudden, he broke out with a rash everywhere that turned into a fever and a cough.  And then I got sick on top of all of that.  I haven’t had time to do much else than cuddle Elijah and blow my nose.

With that and everything else that life throws at us, I find that easy dinner recipes are more important than ever these days.  And, it doesn’t get much easier than one pot meals.  I’ve rounded up 30 of my favorite one pot meals for you today, so hopefully they will give you some dinner inspiration when cooking dinner is the last thing you want to do on a busy weekday!
