I don’t know who came up with the rule that February could only have 28 days, but I’m just ok with it.  As if the days don’t go by too quickly already, we have to now just lose 2 of them?  But, I guess it isn’t all bad because that means that it’s 30 Minute Thursday!  30 Minute Thursday used to stress me out a little bit because despite how easy Rachel Ray makes it look, coming up with a meal that only takes 30 minutes to cook can be really hard!

Healthy Vegetarian Meal Plan – Week Thirty Three

Healthy Vegetarian Meal Plans- easy and flavorful meals for every night of the week! Prep ahead tips + vegan and gluten-free substitutions!

I don’t know about you, but I’m so glad this week is finally over!  It’s been one of those weeks where I feel like I have so much to do, but can just never get caught up.  My 7 month old just learned how to craw and sit up, so basically my days are spent chasing after him and trying to make sure he doesn’t face plant into the floor.  Unfortunately, sometimes he’s just too fast for me!

Then, when I do finally get some free time, my mind is going 100 miles per hour and I can’t just sit and focus on one thing.  So, basically I haven’t gotten anything done and I feel like I’ve been working on everything, haha.  I hope you have had an easier week!  We have some delicious comfort food for you this week, so I hope you all enjoy :)Continue Reading

These days I feel eternally tired.  I’m not naive and knew that becoming a parent would really infringe on my love of sleep, but some days I just feel exhausted all day long.  Even if the hours I’ve slept in one night add up to 10, it sure doesn’t feel like 10 when I have to wake up every few hours.

Last year the thought of making a one pot pasta dish made me really nervous.  It almost seemed like a science to me.  You had to know exactly how much extra liquid to add in so that your pasta would cook perfectly, but not too much or it would be watery or too little and you’d get hard pasta.  But my hatred of doing dishes won out and I decided to give these one pot pastas a try!Continue Reading

It’s Saturday again, which  means that we are more than half way through February!  It’s dark and gloomy today and I’m loving it.  The weather seems so erratic these days, one day we it feels like it’s almost 90 degrees and then the next day it’s raining and I’m digging out all my comfy sweatshirts.  I much prefer sweatshirt wearing to short and tank top wearing this time of year.

This week we have a great mix of warm comfort food and a loaded salad thrown in there for good measure!  I hope you all have a wonderful weekend and that these meals help make your week wonderful as well :)Continue Reading

30 Vegetarian Main Dish Salad Recipes

30 Vegetarian Main Dish Salad Recipes for when you want to eat salad for every meal! Tons of delicious salads all packed with protein and lots of vegetables! They are perfect for lunch or dinner!

If you all haven’t noticed yet, I love salads!  I eat them all year round and can’t help myself when it comes to piling them high with tons of ingredients.  While I can respect a good side salad, I tend to gravitate towards salads that are filling enough that you can eat it for an entire meal.  This means that they have to be packed with protein, vegetables, a little starch and, of course, a delicious dressing to top it all off with.

Today I’m sharing with you 30 Vegetarian Main Dish Salad Recipes, or meal salads as I like to refer to them.  I hope you all love this roundup as much as I do!  Not only do these salads make for great meals, but they also are all great if you want to make them ahead and take them for lunch during the week.  I hope you all have a wonderful weekend :)
