Wow, can you believe that today is October 1st?! Although it feels like this summer really crept by, it seems like Fall is now here and I’m not quite ready for it. Funny how that goes. It doesn’t help that there is a high of 102 here today, but I can definitely feel a cool crispness in the air when I wake up in the morning so I know that cooler fall weather is just around the corner!

Sometimes I get stuck in a mode where I think I need to only post entree recipes, or recipes that are filling enough to eat by themselves. I’ll think of a salad idea and then I start throwing in all these other ingredients like chickpeas and quinoa. Don’t get me wrong, salads like that are amazing and I pretty much eat them for lunch everyday, but today I am giving you a big bowl of pretty vegetables that can be eaten as a delicious side or as an amazing taco topping (taco+this slaw=coming soon!)
My husband bought me an ice cream maker for my birthday a few years ago, and now every year when my birthday rolls around he likes to mention how I’ve only made ice cream in it twice. So, he is probably going to kill me for the fact that the first ice cream recipe I post on the blog does not include an ice cream maker, but c’est la vie!
