- It’s a different way to use gnocchi – Gnocchi is traditionally a food used in Italian cooking but today I’m putting a little spin on it and adding gnocchi to some fajita veggies and black beans and it tastes so good!
- This meal is loaded with veggies – I feel like fajitas are kinda sneaky because they’re basically just peppers, onions and a little bit of protein. The fajita gnocchi is then topped off with an avocado salsa that has a few more veggies in it.
- It’s quick and easy to make – This recipe doesn’t require too many ingredients to make and it only takes about 30 minutes from start to finish. It’s great for a weeknight dinner that doesn’t take a lot of preparation!
Fajita Gnocchi Skillet Recipe Ingredients
- Gnocchi – I used a box of gluten free gnocchi but regular gnocchi is great too. These days you can usually find packaged gnocchi in the pasta section in the grocery store, but you can also make your own if you like. I’ve never made my own gnocchi before but I imagine it is probably a little better than the packaged stuff π
- Peppers – I used a combination of red, green and yellow bell peppers for this recipe. Traditionally, fajitas are made with a combination of different colored bell peppers, but you can always use just one kind if that is what you have on hand.
- Onion – I like to use yellow onions when making fajita veggies but any color of onion should work well.
- Spices – I throw together my own fajita seasoning with just a few spices. If you don’t already have these spices on hand, you can purchase a packet of fajita seasoning at the grocery store and use that instead.
- Black Beans – I usually prefer black beans over pinto beans, but either will work for this recipe.
- Avocado Salsa – The avocado salsa is optional, but I feel like it adds some nice freshness to this recipe and helps cut any heaviness from the gnocchi. You could also just top your fajita skillet with hot sauce, salsa, guacamole or another topping of choice.
How To Make Fajita Gnocchi Skillet With Avocado Salsa
- Heat a large skillet over medium heat and add in your oil. Once the oil is hot, add in the gnocchi and cook until softened and golden brown, about 5 minutes, stirring occasionally.
- Remove the gnocchi from the pan, add in about 2 teaspoons olive oil and the peppers, onions and a pinch of salt. Cook the fajita mixture until peppers are tender, about 5-7 minutes.
- Add the gnocchi back into the pan along with the black beans, salt, pepper and all the spices. Stir until everything is combined and heated through, just a few more minutes.
- Make the avocado salsa while the gnocchi is cooking. Dice the avocados and add them to a large bowl along with all of the other ingredients. Mix until combined and store in the refrigerator until needed.
- Serve dish immediately and top with a big spoonful of avocado salsa.

- Is this recipe gluten free? Yes, I did use gluten free gnocchi and all the other ingredients are naturally gluten free.
- Is this recipe vegan? Yes, it is vegan. If you’re not vegan, you are more than welcome to add cheese or sour cream.
- Can fresh gnocchi be used? I’ve only made this recipe using packaged gnocchi but I think fresh gnocchi would work great. You might just have to change up some of the cooking times depending on the texture of the gnocchi.
- How long do leftovers last? If stored in an airtight container, leftovers should last about 4 days. The gnocchi can get a bit hard once it has cooled down, so it may be best to re-heat in a pan with a little bit of oil.
- What is a good side dish to serve with this recipe? I like to serve with a side of chips and dip, beans and rice or a small salad.

Ingredients
- 1 large package gnocchi, gluten free if needed (the gluten free gnocchi package seems to have less gnocchi than the regular so you might want to use two boxes if you use the GF one)
- 1 large red pepper, thinly sliced and then cut in half
- 1 large green pepper, thinly sliced and then cut in half
- 1 yellow onion, thinly sliced
- 1 (15 ounce) can black beans, drained and rinsed
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 1/2 teaspoons granulated garlic
- 1/4 teaspoon ground oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil
Avocado salsa:
- 2 large avocados
- 1 medium tomato, diced
- 2 tablespoons chopped onion
- 2 tablespoons chopped cilantro
- 1–2 tablespoons chopped jalapeno
- 1 clove garlic, minced
- Juice of 1 lime
- Salt, to taste

Hey Robyn, I know you commented a few months ago, but if you can’t find GF gnocchi, you can always make it! Glutino is my go-to flour. Gnocchi is super easy to make–just a little time-consuming. Make a huge batch on a free day and freeze your leftovers for future meals. It will be a lot cheaper that way too. Buying premade gluten-free is expensive
