Gluten Free Banana Cranberry Honey Bread

This Gluten Free Banana Cranberry Honey Bread is the perfect seasonal twist on your regular banana bread! It is so delicious you will want to make it again and again!

I don’t know if it is the cold weather or the fact that there are usually lots of get togethers with friends and family this time of year, but there is something about the holiday season that makes me want to bake!  Around this time of year I don’t feel like my kitchen is complete without at least one baked good sitting on the counter.

My newest kitchen counter adornment is this Gluten Free Banana Cranberry Honey Bread!  I’ve made it three times in the past two weeks and each time it gets eaten up so quickly.  Remember when I made this Honey Crusted Goat Cheese Salad a while ago?  Well, I’m partnering up with Tate+Lyle® once more and using their Honey Granules in this delicious holiday banana bread!

Gluten Free Banana Cranberry Honey Bread

Since I did something savory with them last time I decided to do a baked good this time.  Bananas and honey go together so well so I thought the Honey Granules would be the perfect accompaniment to this bread.  I used the Honey Granules in place of the granulated sugar in this recipe and it gave it a deliciously sweet honey flavor.  I really like these Honey Granules because they can be used in place of granulated sugar in pretty much all baking recipes and they allow you to get the honey flavor that you love but without all the sticky mess.

However, if you like that sticky mess, you can also mix the Tate+Lyle® Honey Granules with a little bit of liquid to create a really delicious almost toffee-like sauce that goes perfect on the top of this bread!  I hope all of you are having a great holiday season and are baking up a storm just like me!

Gluten Free Banana Cranberry Honey Bread

Ingredients

  • 2 cup gluten free baking flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup canola oil
  • 1/2 cup Tate+Lyle® Honey Granules
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 3 bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups fresh cranberries
  • 1/2 cup chopped walnuts, if desired

Honey Granule Glaze:

  • 2 tablespoons milk, or almond milk
  • 1/2 cup Tate+Lyle® Honey Granules

Instructions

  1. Preheat oven to 325 degrees Fahrenheit. Spray a 9×5 loaf pan with non-stick spray and set aside.
  2. In a medium sized bowl, mix together the flour, baking soda, salt and cinnamon. Set aside. In a large bowl, mix together oil, brown sugar and honey granules. Next add eggs, mashed bananas and vanilla and mix again.
  3. Add the dry ingredients to the wet ingredients and mix until everything is combined. Slowly fold the cranberries and walnuts into batter and pour into the greased loaf pan. Bake bread until a toothpick inserted into the middle comes out clean, about 75 minutes.
  4. Make the Honey Granules glaze just before serving bread. In a small saucepan combine the milk and Honey Granules. Place over medium heat and cook until a creamy dark brown sauce is formed, about 5 minutes. Pour the sauce over each piece of bread just before serving.

    I love baking during the holidays, too, and this bread looks like something I need to try! It looks so moist and delicious, and I can’t get enough cranberries right now. Those honey granules sound amazing, too!
