Description
My vibrant Herbed Yogurt Dressing comes together quickly and is packed full of so much flavor. I use a plain greek yogurt base and then add in fresh herbs, like parsley, cilantro and mint. This homemade dressing can be stored in the refrigerator for about one week and goes great on salads, wraps, pasta, sandwiches and so much more.
Ingredients
- 16 oz plain, non-fat greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon white distilled vinegar
- 1-2 cloves fresh garlic
- 1/2 cup fresh parsley, I used Italian parsley
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped scallions, both the white and green parts
- 1/2 teaspoon pure maple syrup, or honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Extra virgin olive oil, as much as need to thin out the sauce. I used 1 tablespoon.
Instructions
- Add all of the dressing ingredients to a blender, or food processor. I used the ninja blender and it was the perfect size for this amount of dressing.
- Blend until all the ingredients are blended together and dressing is smooth. Drizzle in as much olive oil as need to thin the dressing out to desired texture. Give it a taste and adjust ingredient amounts as needed. Store dressing in an air-tight container, in the refrigerator for up to a week. Add to salads, sandwiches, wraps, pasta and more.
Notes
If you prefer a thicker dressing, you can leave out the olive oil. I like to blend everything together and then slowly drizzle in the olive oil until my desired consistency of dressing is reached.
