Description

This Rainbow Vegetable Pizza is not only beautiful to look at, it’s also super delicious and loaded with tons of healthy vegetables! You can use whatever veggies you like, this one is made with tomato, orange bell pepper, corn, broccoli, kalamata olives and red onion. It’s fun to make with kids, and hopefully it will even convince them to try some new veggies!

  • 16 oz pizza dough, you can make your own pizza dough, buy store-bought pre-made dough, or buy a pre-baked pizza crust.  One pizza dough recipe should be about 16 ounces
  • 1 cup marinara sauce, or more if desired
  • 12 cups shredded mozarella cheese
  • 45 cups chopped rainbow colored vegetables
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt

Instructions

  1. Pre-heat oven to 500 degrees F.  Roll your pizza dough into into desired size and shape.  For this pizza, I like to do an oval so I can but the pizza in a way where each piece has all the rainbow colors on it.  You can make the pizza crust whatever thickness you prefer.  I roll mine about 1/2 an inch thick.
  2. Prick pizza dough with a fork all over, to prevent bubbles from forming.  Grease a large sheet pan, or pizza pan, and place pizza dough on top of the pan.  Spread evenly with marinara sauce and top with shredded cheese.
  3. Cut all your vegetables into small pieces.  You can make them whatever size you like, I prefer smaller, bite sized pieces.  Figure out what kind of rainbow design you are going to do, and then place your vegetables onto of the pizza.
  4. Add olive oil, granulated garlic, oregano and salt to a small bowl.  Mix it together well and then use a cooking brush, or spoon, to drizzle the oil mixture lightly over the vegetables.
  5. Place pizza in the oven and bake until edges are browned and cheese is melted, about 15 minutes.  Let pizza cool for 5-10 minutes, cut and enjoy.

  • Yellow – Corn, yellow pepper, pineapple, yellow squash
  • Green – Broccoli, green pepper, green onion, zucchini, jalapeño, spinach
  • Blue, Indigo, Violet – Kalamata olives, purple onion, cooked purple potatoes, eggplant, purple cabbage, radicchio
