Spring is definitely in the air these days. Not only are the flowers blooming while we are enjoying perfect weather, we are also doing a ton of spring cleaning. It’s exhausting but also really gratifying at the same time. We live in a three bedroom house that consists of our bedroom, a guest room and then another room this is my office/second wardrobe. Up until a few days ago the entire closet was full of my clothes and there was also an extra dresser that was filled with my clothes too. I guess I have a lot of clothes! Which is kinda sad because right now I can’t fit into any of them!
We’ve decided to turn that room into our nursery so I’ve had to downsize a little bit. But, it turns out that I probably didn’t need half the stuff anyway though, and it’s for a very worthy cause so I’ve had a good attitude about the whole thing. It also feels really nice to be planning for something so exciting!
I feel like there is something so motivating about the season of spring. It always makes me want to eat a little cleaner and add more salads to my menu. This salad is really simple to make and consists of a few of my favorite spring ingredients, plus this delicious balsamic tahini dressing. It’s tangy from the balsamic but also creamy and nutty from the tahini. It’s perfect if you are looking for a new twist on an old favorite dressing!Print
- Baby spinach and/or arugula
- Fresh strawberries, sliced
- Sugar snap peas, cut in half either lengthwise or widthwise
- Toasted pecans
- Sliced avocado
Balsamic Tahini Dressing:
- 1/3 cup olive oil
- 1 tablespoon + 1 teaspoon balsamic vinegar
- 1 heaping tablespoon tahini
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Add all dressing ingredients to a jar and whisk until combined and a creamy dressing is formed.
- Assemble desired amount of salad and dress with dressing.
You can make this salad in as many portions as you like, just adjust salad ingredients accordingly!
