Cherry Tomato Jam & Avocado Grilled Cheese

Ingredients

  • Cherry Tomato Jam (link to recipe above)
  • Udi’s Gluten Free Bread
  • 12 tablespoons butter
  • Cheese slices
  • Sliced avocado, 1-2 depending on how many sandwiches you are making

Instructions

  1. Heat a large pan over medium heat. Butter one side of each piece of bread. On the non-buttered side, spread with cherry tomato jam and then top with cheese and avocado slices. Place the other piece of bread on top, with the buttered side facing up, and place in the pan. Cook grilled cheese until each side of the bread is browned and cheese is melted, 2-3 minutes on each side.
  2. Repeat process for each grilled cheese.

Notes

Ingredient amounts really depend on how many sandwiches you are making, but for each sandwich I would recommend: 2 slices of bread, 1-2 tablespoons cherry tomato jam, 2 slices of cheese, and 3-4 thin slices of avocado.
