Description
This homemade Fresh Cilantro Lime Rice is bursting with flavor, as well as color. My version is a little bit different from the original, but you’ve got to trust me on this! The vibrant green sauce is packed with fresh ingredients and gets blended until smooth, before mixing it into the cooked rice. This healthy side dish can be made ahead of time and even frozen for up to 3 months.

- 4-5 cups cooked rice, I used two 10 ounce bags of frozen rice
Cilantro Lime Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lime juice
- 1/2 cup packed cilantro, or about one large bunch
- 2-3 cloves garlic, roughly chopped
- 1 1/2 teaspoons pure maple syrup, or honey
- 1/2 teaspoon dijon mustard (optional)
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt, or more to taste
Instructions
- Add all the cilantro lime dressing ingredients to a blender and blend until smooth, 1-2 minutes. Give the dressing a quick taste and adjust flavorings as needed.
- Add the cooked rice into a large bowl and then pour the cilantro lime dressing over. Use a large spoon to mix together until completely combined. Rice can be served immediately or stored in the refrigerator until ready to enjoy.
