Description

These Frittata Breakfast Sandwiches are easy to make ahead of time and great for a healthy vegetarian breakfast that is packed with veggies and protein! Make a batch on Sunday and have a ready to go breakfast every morning. You can make this recipe with any veggies you have on hand!


Ingredients

  • 34 cups diced vegetables, such as: zucchini, bell peppers, onion, mushrooms, spinach, kale, broccoli, tomato
  • 3 large eggs
  • 1/4 cup blended cottage cheese (blend cottage cheese in a blender or food processor until smooth)
  • Olive oil or cooking spray
  • Salt and black pepper
  • English muffins, or favorite bread
  • Optional toppings: cheese, mixed greens, tomato, avocado, hot sauce, pickled jalapenos

Instructions

  1. Pre-heat oven to 400 degrees F.  Grease a 9×13 baking dish well, with either cooking spray or butter.  Chop all of your vegetables into bite sized pieces.  Heat a large pan over medium heat and add about 1 teaspoon olive oil.  Once oil is hot, add in your diced vegetables and season with a big pinch of salt and pepper.
  2. Mix everything together and cook veggies until softened and starting to brown, 5-7 minutes.  Add the cooked veggies to the bottom of the baking dish in a single layer.
  3. Crack your eggs into a medium sized bowl.  Add in the cottage cheese and salt and black pepper.  Whisk mixture together well and then pour over the veggies.  Gently tilt the baking dish back and forth to make sure the eggs reach to all the edges of the pan.
  4. Place frittata in the oven and bake until the eggs are completely cooked through and firm to the touch, about 20-25 minutes.  Remove from the oven and let sit until cool enough to handle.  Remove frittata bake from the pan and cut into about 6 equal sized pieces.
  5. Assemble your breakfast sandwiches.  Cook English muffins in the toaster until lightly browned and crispy.  Add your favorite breakfast sandwich ingredients, along with a slice of the frittata and enjoy!

Notes

You can substitute the cottage cheese with heavy cream, sour cream or greek yogurt.
