Description

This Herby Cucumber Salad with Feta and Chickpeas is flavorful, refreshing and easy to make!  It’s a great side dish for a potluck or BBQ, but is also delicious stuffed into a warm pita for lunch.  You only need a few simple ingredients to make this tasty summer salad!


Ingredients

  • 2 medium sized English cucumbers, or regular ones (about 4 cups)
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup small diced or crumbled feta cheese
  • 1/2 small red onion, thinly sliced
  • 12 cloves garlic, minced
  • 1/2 cup chopped fresh herbs, I used a combination of parsley, cilantro and mint
  • 1/4 cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • Juice of 1/2 lemon, or more if desired
  • Salt and black pepper, to taste

Instructions

  1. Thoroughly wash and dry your cucumber.  Dice it into small, bite sized pieces and add them to a large bowl.  Next, add in the chickpeas, red onion, feta cheese, garlic and fresh herbs.
  2. Next, add in the olive oil, red wine vinegar, lemon juice, salt and black pepper.  Mix everything together and season with extra salt and pepper, to taste, if desired.
  3. Serve immediately, or store in the refrigerator for up to 4 days.  This cucumber salad is great enjoyed with crackers, chips or pita.  It can also be eaten on its own as a side salad.
