Description

Once you start making homemade granola, you’ll never eat store-bought again! This Homemade Maple Pecan Granola Recipe is easy to make and packed with healthy ingredients that will fill you up and make your body feel great. Serve this super chunky granola with milk or yogurt and fruit for a balanced breakfast.  The pecans are perfectly toasted and go so well with the flavor from the maple syrup.

Ingredients

Scale
  • 4 cups old fashioned rolled oats
  • 2 cups halved or chopped raw pecans
  • 1/4 cup shelled hemp hearts
  • 2 tablespoons whole flax seeds
  • 2 tablespoons chia seeds
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 teaspoon salt
  • 1/2 cup pure maple syrup
  • 1/2 cup coconut oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract OR 1/4 teaspoon maple extract

Instructions

  1. Pre-heat oven to 325 degrees F and line an extra large baking sheet with parchment paper.  To a large bowl, add the oats, pecans, hemp hearts, flax seeds, chia seeds, cinnamon, brown sugar and salt.  Mix together well and set aside.
  2. In a small saucepan, add the maple syrup and coconut oil.  Place over medium heat and cook until mixture is melted together, 2-3 minutes.  Remove from the heat and stir in the vanilla extract.
  3. Pour the maple syrup mixture over the oat mixture and use a large spoon to mix everything together well.  The small seeds will fall to the bottom of the bowl, so make sure you mix them in also.  You want everything to be lightly coated with the maple syrup and coconut oil mixture.
  4. Pour the granola mixture onto the parchment paper lined pan, and use a spatula, or your hands, to press it down into a single layer.  Place the pan in the oven and bake granola until the top and edges are starting to brown, about 40-50 minutes.  Don’t touch the granola at all while it is in the oven, just let it bake in a single layer without tossing.
  5. Remove granola from the oven and allow to cool for at least 20 minutes on the tray.  Once cooled, you can use your hands to break up the granola into small chunks.  Enjoy with milk, yogurt or as a snack.
