Description

This Hummus Toast with Bruschetta is bursting with fresh flavors and is great for an easy breakfast, lunch or snack!


Ingredients

Scale
  • 1 cup diced cherry tomatoes, or regular tomatoes
  • 2 tablespoons chopped fresh basil
  • 12 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons olive oil
  • 24 slices toast, I like to use a good sourdough
  • 1/2 cup hummus, homemade or store-bought
  • Salt, to taste

Instructions

  1. Start by making the bruschetta.  Add the diced tomatoes, basil, garlic, olive oil, balsamic vinegar and salt to a bowl and mix until combined.  Give it a taste and adjust ingredients accordingly.
  2. Toast your bread and let cool for a minute.  Spread your toast with a big spoonful of hummus and then top with a couple spoonfuls of the bruschetta.  Enjoy!
