Description
If prepping entire meals ahead of time makes you feel overwhelmed, you might instead prefer prepping singular ingredients that can be used in many different recipes. These Seasoned Roasted Sweet Potatoes come together quickly and they will add a hearty bite to all the dishes you add them to. They’re great in breakfasts, lunches or dinners and can even be snacked on throughout the day.

- 3-4 medium sized sweet potatoes, about 6-8 cups once diced
- 3 tablespoons extra virgin olive oil
- 1 1/2 teaspoons paprika
- 1 teaspoon granulated garlic
- 1/2 teaspoon cumin (heaping teaspoon)
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Pre-heat oven to 450 degrees F. Wash sweet potatoes well and then you can peel them, if desired. Otherwise, keep the peels on and dice them into bite sized pieces. It doesn’t really matter what size they are, as long as they are all similar sized, so they cook evenly. Place the diced sweet potato on an extra large baking sheet.
- Add the olive oil, paprika, cumin, onion and garlic powder, salt and pepper on top of the diced sweet potatoes and use your hands to toss everything together until the diced sweet potatoes are evenly coated with the oil and spices. Arrange them in a single layer on the sheetpan and then place in the pre-heated oven and bake until fork tender and just starting to brown, 30-40 minutes.
- Remove from the oven and allow to cool for a few minutes before using. My seasoned roasted sweet potatoes can be enjoyed as a side dish or you can add them to lots of different recipes including: salads, tacos, pasta, buddha bowls or even breakfast bowls.
