Description

These Spicy Potato Tacos with Black Beans are easy to make and so flavorful!  Enjoy them for breakfast or dinner!


Ingredients

Scale
  • 1 (24 oz) bag Trader Joe’s roasted potatoes with peppers and onions
  • 1 (15 oz) can Trader Joe’s cuban style black beans
  • 1 container Trader Joe’s guacamole
  • 1 container Trader Joe’s romesco sauce
  • Corn tortillas
  • Optional topping: fresh cilantro

Instructions

  1. Heat a large pan over medium heat.  Add the bag of potatoes and cook until potatoes are heated through, it helped to cover the pan for a few minutes to really heat them up.  I found that I didn’t need any additional oil but you could add some if you like.
  2. Drain and rinse the black beans and add them to the pan once the potatoes are completely cooked.  Stir everything together and cook until heated through.
  3. Heat your corn tortillas up, either on an open flame burner or in a pan.  Spread each tortilla with a spoonful of guacamole, top with 1-2 spoonfuls of the potato mixture and then top with romesco sauce.  Add some fresh cilantro if desired and enjoy!
