Happy March! I’m not sure if it’s because February only has 28 days or if I’m getting older, but time seems to fly by these days. When I was younger, I couldn’t wait until the next month or year because I just wanted to grow up. But now I’m really enjoying this current stage in my life, and I want things to slow down!
It feels like just yesterday that I was sad because spring was over and I hadn’t gotten to make all my favorite spring recipes. More importantly, summer had arrived, and it was 110 degrees outside! The seasons are kinda strange here in Arizona. I feel like we do get to experience all four seasons, but some for only a week or two, and unfortunately, Spring is one of those seasons. So, I know it isn’t spring weather everywhere right now, but I gotta take advantage while I can!
How To Make This Green Salad
- Chopped greens – You can use any of your favorite greens.
- Green apple
- Cucumber
- Shelled edamame
- Green onion
- Avocado – diced
- Broccoli florets
- Green grapes – It’s always helpful to halve grapes for salads; this allows them to be speared more easily with a fork.
- Pistachios – I like to roughly chop the pistachios.
- Herb dressing – I made the dressing with olive oil, fresh lemon juice, Dijon mustard, pure maple syrup, chopped fresh herbs (choose your favorites!), fresh garlic, salt, and black pepper.
How To Make This St. Patrick’s Day-Inspired Salad
- Place all the dressing ingredients in a jar and whisk or shake until well combined. Set aside.
- Place chopped greens into a large bowl and top with the remaining chopped salad ingredients. Drizzle the salad with the desired amount of dressing and toss until well combined. You could also just top each individual salad serving with the desired amount of dressing.
Chopped Green Salad Recipe Thoughts and Tips
- Although it is a little bit early, this is really a St. Patrick’s Day-themed salad! Salad might not be the first thing that comes to your mind when you think of St. Patrick’s Day, but this really is the Greenest Chopped Salad you will ever see, and it would go perfectly with a big pint of green beer 🙂 At least I’m going to pretend it would!
- Spring weather always makes me want not only to clean up and organize the house a bit, but also to eat lighter in preparation for summer. This salad is perfect for that.
- The spring mix makes this salad nice and light, and the other super green ingredients bulk it up and make it filling.
- There’s creaminess from the avocado and feta, a salty bite from the green olives, sweetness from the green apple, and crunchiness from the broccoli and pistachios. Every good salad needs some crunch!
- This recipe makes enough salad for about four people, but you can make it as small or as large as you like; just use as much of each ingredient as you’d like.
- Feel free to get creative with the green ingredients you choose. 🙂
- This salad will stay fresh in the fridge for about four days.

Ingredients
- 6 cups chopped greens, your favorite kind
- 1 green apple, chopped
- 1 cup chopped cucumber
- 1 cup shelled edamame
- 1/2 cup thinly sliced green onion
- 1 avocado, diced
- 1 cup broccoli florets
- 1 cup green grapes, cut in half
- 1/2 cup pistachios, roughly chopped
Herb Dressing:
- 1/3 cup olive oil
- Juice of 1 lemon
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon maple syrup
- 2 tablespoons chopped fresh herbs, your favorite kind
- 1 small clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Place all dressing ingredients into a jar and whisk or shake until combined, set aside.

You can put in any you like! Spinach, kale, romaine lettuce, spring greens anything like that that you enjoy eating 🙂
