Description

These BBQ Black Bean Quesadillas take about 30 minutes to prepare and they’re healthy and filling. The black beans are cooked in an easy homemade bbq sauce and combined with melted cheese inside of a crispy tortilla. These vegetarian quesadillas are great for lunch or dinner. Enjoy with guacamole, sour cream or salsa!


Ingredients

  • 2 teaspoons olive oil, or oil of choice
  • 1/2 yellow onion, diced
  • 23 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 tablespoon ketchup
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons tamari, or soy sauce
  • 1 tablespoon pure maple syrup
  • 3/4 teaspoons smoked paprika
  • 1 teaspoon dijon mustard
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 (15 oz) cans black beans, drained and rinsed
  • 46 large flour tortillas
  • 1 1/22 cups shredded cheese, whatever kind you like
  • Butter or oil for cooking quesadillas

Instructions

  1. Heat a large pan over medium heat and add 2 teaspoons olive oil and the onions.  Cook for 2-3 minutes until onions are soft and then add in garlic.  Cook for another 1-2 minutes.
  2. Add in the marinara sauce and all remaining ingredients, excluding the black beans.  Stir until sauce is combined and let cook for 3-5 minutes to allow the flavors to develop. Next, add in the black beans, mix everything together and let cook another 2-3 minutes.
  3. Assemble your quesadillas.  Lay your flour tortilla on a flat surface and add a couple spoonfuls of the bbq black beans to half of the tortilla.  Spread them out with a spoon and then top with about 1/3 cup shredded cheese.  Fold the other side of the tortilla over so you have a quesadilla.
  4. Heat a large pan over medium heat and add some oil or butter.  Place your quesadillas in the hot pan and let cook for about 3-4 minutes on each side, until golden brown and cheese is completely melted.  Let cool for a few minutes and enjoy.
