BBQ Black Bean Quesadilla Recipe Ingredients
- Black Beans – I used two cans of black beans that I rinsed and drained. You can use homemade black beans also. If you don’t have black beans, pinto beans or white beans would work great.
- BBQ Sauce – I use a homemade bbq sauce that I’ve been making for years. It has a marinara sauce base, along with ketchup, dijon mustard, maple syrup, apple cider vinegar and lots of spices. It’s quick and easy to throw together, but bottled bbq sauce would also work if you prefer that.
- Tortillas – I used burrito sized flour tortillas. Any size of tortillas will work though. You can also use gluten free tortillas or corn tortillas if you need to make this recipe gluten free.
- Cheese – You can use any kind of cheese you like for these quesadillas, as long as it melts well. I just used a mixture of cheddar and Monterey Jack cheeses that I bought already shredded. Vegan cheese can also be used, if needed.
How To Make Black Bean Quesadillas
- Heat a large pan over medium heat and add 2 teaspoons olive oil and the onions. Cook for 2-3 minutes until onions are soft and then add in garlic. Cook for another 1-2 minutes.
- Add in the marinara sauce and all remaining ingredients, excluding the black beans. Stir until sauce is combined and let cook for 3-5 minutes to allow the flavors to develop. Next, add in the black beans, mix everything together and let cook another 2-3 minutes.
- Assemble your quesadillas. Lay your flour tortilla on a flat surface and add a couple spoonfuls of the bbq black beans to half of the tortilla. Spread them out with a spoon and then top with about 1/3 cup shredded cheese. Fold the other side of the tortilla over so you have a quesadilla.
- Heat a large pan over medium heat and add some oil or butter. Place your quesadillas in the hot pan and let cook for about 3-4 minutes on each side, until golden brown and cheese is completely melted. Let cool for a few minutes and enjoy.

- 2 teaspoons olive oil, or oil of choice
- 1/2 yellow onion, diced
- 2–3 cloves garlic, minced
- 1 cup marinara sauce
- 1 tablespoon ketchup
- 2 teaspoons apple cider vinegar
- 2 teaspoons tamari, or soy sauce
- 1 tablespoon pure maple syrup
- 3/4 teaspoons smoked paprika
- 1 teaspoon dijon mustard
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 (15 oz) cans black beans, drained and rinsed
- 4–6 large flour tortillas
- 1 1/2 – 2 cups shredded cheese, whatever kind you like
