Description

This Greek Salad Hummus Dip is easy to throw together and great for a party or a light and fresh lunch!


Ingredients

Scale
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1 /2 cup diced red onion
  • 1/2 cup sliced kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/3 cup fresh herbs, such as mint, parsley or dill
  • 1 clove garlic, minced
  • 1 1/2 tablespoon olive oil
  • 1 1/2 tablespoon red wine vinegar
  • Salt and pepper, to taste
  • 2 cups prepared hummus, any flavor you like
  • Pita bread for serving, pita bread in photos is my Pan Fried Pita Bread Recipe (highly recommend!)

Instructions

  1. If making homemade hummus, you can prepare that first.  Also, if you are making my crispy pita bread you can prepare that before assembling the dip platter.
  2. To a medium sized bowl, add the cucumber, tomato, kalamata olives, onion, fresh herbs, garlic, olive oil, red wine vinegar, dried oregano and a pinch of salt and pepper (to taste).  Mix everything together, add the feta cheese and gently mix again.
  3. You will want to use a large oval or round serving plate, a cutting board would even work.  Spread the hummus in an even layer on the bottom of the platter.  Next, use a slotted spoon to scoop the Greek salad over the hummus.  The liquid in the bowl is really flavorful, but will make things a little soggy if there is too much.
  4. If serving to a crowd, it’s nice to sprinkle the top with some extra fresh herbs and feta cheese.  You can serve with the pita on the side of the plate or the pita can be on its own plate.  For serving: pita can be scooped directly into the dip or you can put a few spoonfuls of the dip on a plate and dip from there.
