This Lemon Tahini Chickpea Salad Pitas are so flavorful and delicious!  They’re perfect for an easy lunch or snack.


  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup diced carrot
  • 1/3 cup diced kalamata olives
  • 1/3 cup tahini
  • 1/4 cup fresh lemon juice
  • 12 cloves garlic, minced
  • 1/4 cup chopped fresh herbs, I used a mix of parsley and dill
  • Salt and black pepper, to taste
  • 4 pitas


  1. Add your drained and rinsed chickpeas to a large bowl and roughly mash with a fork.  Next, add in all of your chopped vegetables and mix everything together.
  2. Add the remaining ingredients (tahini, lemon juice, garlic, fresh herbs, salt and pepper) and mix everything together really well.
  3. Warm your pita and then top it with a few scoops the chickpea salad and enjoy!  This chickpea salad can also be enjoyed by itself, with chips, crackers or even lettuce wraps!
