Pumpkin Enchilada Sauce

Ingredients

  • 115 ounce can of 100% pure pumpkin
  • 2 cups water
  • 4 teaspoons maple syrup
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1 pinch allspice
  • 1 pinch nutmeg
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • crushed red pepper flakes, to taste

Instructions

  1. Add all ingredients to a blender or food processor and blend for about 1 minutes, until all ingredients are combined.
  2. Makes about 3 cups.
