Craving a fresh, summer themed pizza for your next pizza night? This Summer Squash and Tomato Pizza has all the fresh flavors of summer, all in one cheesy and delicious pizza! The squash is caramelized to perfection and it adds so much flavor to this colorful vegetarian pizza recipe!

Instructions

  1. Make your caramelized squash.  Follow directions that can be found in this post.  For this pizza recipe you just need about one large pan full of the squash.  You are more than welcome to load on more though!
  2. Pre-heat your oven.  I pre-heat my oven to 500 degrees F when using fresh pizza dough. If using a pre-made crust that is already pre-cooked, just follow package directions for heating instructions.
  3. Line a pizza pan with parchment paper, or spray with cooking spray.  Roll pizza dough out into shape of pizza pan and place dough onto pan.  I like to prick my dough a few times with a fork so the dough doesn’t bubble up too much when it cooks.
  4. Spread the pizza dough with about 1/2 cup marinara sauce (it will depend on the size of your pizza) and top with about 1 cup shredded, or fresh, mozzarella. Next, add your thinly sliced tomatoes (optional) and lastly, top with all of your caramelized squash.
  5. Place the pizza in the pre-heated oven and bake until cheese is melted and pizza crust is completely cooked through, 15-20 minutes.  Remove from oven, let cool, top with fresh herbs and enjoy.

Notes

Measurements I added are just suggestions.  How much of each ingredient you use will depend on the size of your pizza.  Let me know if you have any questions!
