Description

This Teriyaki Tofu Stir Fry is made with just 5 ingredients and is perfectly for an easy weeknight dinner!


Ingredients

Scale
  • 2 teaspoons olive oil
  • 1 (16 oz) package high protein extra firm tofu (Trader Joe’s Brand)
  • 1 (18 oz) package asian style vegetable stir fry mix (Trader Joe’s Brand)
  • 1 (21 oz) bottle Soyaki Sauce (Trader Joe’s Brand)
  • Organic Jasmine Rice microwave packets (about 1/2 per person) (Trader Joe’s Brand)
  • Sliced green onions

Instructions

  1. Drain tofu and pat dry.  Dice tofu into bite size pieces.  Heat a large pan over medium heat and add 1-2 teaspoons olive oil and the tofu.  Stir and cook tofu until browned on all sides, 7-10 minutes.
  2. Add in the stir fry veggie mix and 1/2 – 1 cup Soyaki sauce.  You want to add enough so that the vegetables and tofu can simmer in the sauce.  Cover pan and cook until veggies are softened, 10-12 minutes, stirring occasionally.
  3. Cook rice in the microwave according to package directions and spoon about 1/2 – 3/4 cup of rice into each bowl.  Top with a big spoonful of the rice and veggie mixture and top with sliced green onions.
