Description

This Thai Green Curry with Chickpeas and Vegetables is easy to make and great for a healthy vegan weeknight dinner!


Ingredients

Scale
  • 1 package of Trader Joe’s Ready Veggies, or another vegetable stir fry mix
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 jar Trader Joe’s Thai Green Curry Simmer Sauce
  • Frozen brown rice, or regular rice
  • Fresh cilantro for garnish

Instructions

  1. Start by preparing your rice.  I used the microwave rice so I just microwaved the bag for 3 minutes and then let sit until the rest of the meal was ready.
  2. Heat a large pan over medium heat and add a couple of teaspoons of olive oil.  Next, dump in the bag of veggies and season with salt and pepper.  Stir everything together and cook until the veggies are beginning to soften, about 5 minutes.
  3. Add in the chickpeas, stir together, and then add in the jar of Thai green curry sauce.  Mix everything together, cover with a lid and let cook until vegetables are tender, about 5 minutes.  If you find that it’s too thick, you can add a little bit of water.  Taste and season with extra salt, if needed.
  4. Add your rice to a bowl and top with your curry vegetable mixture.  Garnish with the fresh cilantro and enjoy!
