Looking for a quick and easy, refreshing snack that you’ll want to be eating all summer long? You’ve got to try my Chunky Tzatziki Cucumber Salad. It only takes about 15 minutes to prep and is perfect for bringing to a potluck, packing for a hike or enjoying at the beach. Use this flavorful cucumber salad as a dip for pita chips or stuff it into a warm pita with hummus and extra veggies.
Ingredients

- 2 cups small diced cucumber, I like to use English cucumbers
- 1/2 cup small diced, or crumbled, feta cheese
- 1/3 cup small diced red onion
- Pita chips for serving, if desired
Yogurt Sauce
- 1/2 cup plain, non-fat greek yogurt
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh mint
- 1-2 cloves garlic, minced
- Salt, to taste
Instructions
- Add all tzatziki sauce ingredients to a large bowl and whisk until completely combined. Give the sauce a quick taste and add any extra salt needed.
- Add the diced cucumbers, red onion and crumbled feta cheese and mix well. Serve cucumber salad immediately, or chill in the refrigerator until ready to enjoy. Serve with pita chips for dipping.
