The weather has really started to warm up lately, and it’s got me craving no-cook summer salads like this Chunky Tzatziki Cucumber Salad. It’s quick and easy to throw together while also being packed with tons of fresh flavors. You can enjoy it as a dip, or make it more of a meal by stuffing it into a warm pita pocket. This cucumber salad is great when enjoyed as a salad or dip, but if you want something more substantial, I would recommend making a pita bread sandwich, or wrap with it. You can add hummus to the pita bread, or chickpeas to the cucumber salad if you want extra protein. Here are a few tips for making the best cucumber tzatziki pita sandwich:
- Toast the pita bread – The pita bread doesn’t have to be heated up before assembling these sandwiches, but I do recommend it. Giving the pita a quick toast in the toaster or on the stovetop gives it some crunchy texture and you can even add oil and soy sauce for extra flavor. - Use a flavored hummus – I usually make this recipe with plain hummus, but if you want extra flavor, you can use a flavored hummus. I would recommend lemon, kalamata olive or even something spicy like chili crisp flavored hummus.
- Add extra ingredients – I like to add some thinly sliced red onion to these pita sandwiches, but tomato, fresh greens or even roasted eggplant would be great additions.

- Cucumber – I like to use English cucumbers for this recipe because I love their flavor and they have a thinner, less waxy skin on them. Any type of cucumber will work though.
- Red Onion – Fresh red onion adds texture and flavor to this creamy cucumber salad. Any type of onion will work though.
- Yogurt Sauce – My tzatziki inspired sauce is made using plain Greek yogurt, lemon juice, dill, mint, garlic, salt and pepper. You can buy a pre-made tzatziki sauce in most grocery stores these days, which will save you a little bit of time, if needed.
- Feta Cheese – The feta cheese is optional, but it adds some nice creaminess and saltiness that goes well with the other ingredients. It also adds extra protein.

- Add all tzatziki sauce ingredients to a large bowl and whisk until completely combined. Give the sauce a quick taste and add any extra salt needed.

- 2 cups small diced cucumber, I like to use English cucumbers
- 1/2 cup small diced, or crumbled, feta cheese
- 1/3 cup small diced red onion
- Pita chips for serving, if desired
Yogurt Sauce
- 1/2 cup plain, non-fat greek yogurt
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh mint
- 1-2 cloves garlic, minced
- Salt, to taste
