Description

These Vegan Falafel Pitas are easy to make and so delicious!  All the flavors of a traditional falafel pita but prepared in just about 15 minutes!

Ingredients

Scale
  • 1 bag Trader Joe’s fully cooked falafel
  • Trader Joe’s Whole Wheat Pita Bread Pockets
  • Trader Joe’s hummus dip, you can use any kind of TJ’s flavored hummus
  • 1 package butter lettuce, or your favorite TJ’s greens
  • Trader Joe’s Vegan Tzatziki Sauce
  • Optional garnishes: fresh herbs, red pepper flakes

Instructions

  1. Heat your falafel.  You can either heat them up in the microwave or the oven.  Follow package directions.  Let falafel balls cool a few minutes and then cut them into bite size pieces.
  2. Place a slice of pita bread on a plate and top with a few spoonfuls of hummus.  Spread hummus out in an even layer.
  3. Top hummus with your lettuce/greens.  I like to make sure they are chopped up into bite size pieces so the pitas are easier to eat.  Top lettuce layer with your chopped up falafel and then add a few spoonfuls of the tzatziki sauce.
  4. Cut into slices so it’s easier to eat and enjoy!
