These 10-Minute Curried Chickpea Tofu Lettuce Wraps come together in just 10 minutes. They’re a healthy and delicious no-cook meal full of fiber and nutrients.
I made a big batch of these Curried Chickpea Tofu Lettuce Wraps last week, and I couldn’t stop eating them. I’m pretty sure there was a day or two when I ate them for every meal. They’re quick, easy, healthy, and don’t require any cooking.
I’m a firm believer that you can make anything taste amazing just by adding some curry powder, and these 10 Minute Lettuce Wraps do not dispute that theory 🙂
Curried Chickpea Tofu Lettuce Wrap Recipe Ingredients
- Chickpeas – I used one can, drained and rinsed.
- Tofu – For these wraps, I used one 16-ounce package of baked tofu.
- Vegetables – This recipe calls for chopped celery, onion, and butter lettuce or romaine, any type that yields a generous cup for wrapping.
- Grapes – I used red grapes, cut in half, to add a touch of sweetness.
- Mayo – I used vegan mayo.
- Chopped cashews
- Spices – Curry powder, salt, and pepper.
How To Make These 10-Minute Chickpea and Lettuce Wraps
- Add the chickpeas to a large bowl and mash them roughly with a potato masher. Use your hands to crumble the tofu into the bowl, then add all the other ingredients. Stir until combined.
- Separate the lettuce cups and fill each one with the desired amount of filling. Enjoy!
Recipe Tips and Thoughts
- These wraps are vegan and gluten-free.
- Curry powder has such a warm and unique taste that isn’t usually too overpowering or strong. It pairs well with any “salad sandwich” recipe and adds a great flavor to everything.
- I always like to add a little pop of sweetness to this kind of recipe, and the red grapes are perfect for this summer meal.
- They’re a great meal to throw together in a crunch; I don’t recommend making them in advance because the lettuce may get wilty.

- 1 (15 oz) can chickpeas, drained and rinsed
- 1 (6 oz) package baked tofu
- 1/2 cup chopped celery
- 1/2 cup red grapes, cut in half

Sure! You could yogurt or an oil based dressing. I just buy pre-baked tofu for this recipe 🙂

Loved this recipe. Did not have grapes – substituted with craisins, had some left over hummus and threw that in also. Also very good in a sandwich. Yums.

Ya know, I hardly ever make lettuce wraps but I really like them.. I’ll definitely have to start making them more this summer when I don’t feel like cooking! Love how you added cashews into the mix.
