The eggs and cheese are both soft and usually end up blending into each other. Over the years, I’ve found that If I crisp up the cheese in the pan, it adds so much extra texture and flavor. - Try out different cheeses – I used pre-sliced sharp cheddar cheese here, but any kind of meltable cheese should work for this recipe. Parmesan cheese would add a nice saltiness, while a smoked gouda or mozzarella would be really nice too.
- Make your eggs ahead of time – I’ve been really into meal prepping my scrambled eggs lately. All you have to do is make a big batch and then refrigerate them until ready to use. You can either do scrambled or you can bake them in a pan and cut them into slices to add to the sandwiches.
- Add additional ingredients – The egg and cheese is delicious on it’s own, but if you want some extra heat, I would suggest adding a few slices of jalapeños, or even a spoonful of chili crunch.

- Cheese – I used slices of sharp cheddar cheese for these sandwiches, but any kind of meltable cheese should work. You can lay down a slice like I did, or use grated cheese and make a little egg sized circle with it.
- Eggs – The eggs do need to be cooked before adding them into the pan with the cheese. I usually just use scrambled eggs, but I would also recommend making a pan of baked eggs and then slicing them up, rather than having pieces of scrambled eggs.
- Bread – I used English muffins for these sandwiches, but any type of bread can be used. You can even make them open faced if you prefer.
- Jalapeno – Jalapeños are optional, but I love adding a few thin slices of them just under the cheese. They get nice and caramelized while also adding a kick to the sandwiches. You can use pickled or fresh jalapeños for this recipe.

How To Make Crispy Cheesy Breakfast Sandwiches
- Heat a large pan over medium-low heat. Spray with cooking spray and then place the cheese slices down. If adding jalapeño, place them directly on the pan and then place the cheese slice over the top of them.
- Add one serving of the cooked eggs on top of the cheese and give them a gentle press down. Place the lid on top of the pan and just let the cheese start melting. It should take about 3-5 minutes for the cheese to become brown and crispy, and during that time you want to just let it cook without moving it around at all.
- Once the edges of the cheese are fully browned, use a spatula to gently scrape them off the bottom of the pan. Flip over onto your English muffin and then place the other slice of English muffin on top. Add any extra toppings you like and enjoy right away for maximum crispiness.

- 4 English muffins, toasted
- Sliced jalapeno, optional
