Strawberry-Banana Oatmeal Cups Recipe Ingredients
- Oats – This recipe calls for old-fashioned oats. Be sure you’re using gluten-free-certified if necessary.
- Sugar – I used coconut sugar, but you can also use brown.
- Cinnamon
- Baking powder
- Salt
- Chia seeds
- Flax
- Almond milk -You can also use another dairy-free milk you like; ensure it’s unsweetened.
- Vanilla extract
- Pure maple syrup – Be sure to use pure maple syrup and not the artificially sweetened pancake syrup.
- Fruit – I used an extra-large banana (or two small bananas), which I mashed, and diced strawberries.
Why Your Body Will Love These Oatmeal Cups
Oatmeal has many benefits, including making our bodies feel full longer (fiber!), which can lead to weight control. It can lower cholesterol, help reduce the risk of heart disease and diabetes, and promote healthy gut bacteria and intestinal health. The fiber in oats also helps relieve constipation, and beta-glucan, a soluble fiber, can lower cholesterol and blood glucose levels. It’s also a great source of antioxidants and essential vitamins and minerals like manganese, thiamine, zinc, and copper.
How To Make These Make-Ahead Breakfast Cups
- Preheat oven to 375 degrees F. Add all dry ingredients to a large bowl and mix.
- Add all the ingredients to the bowl and mix until completely combined.
- Spray a muffin tin with cooking spray, and scoop the oatmeal mixture into it using a large ice cream scoop or a 1/4 measuring cup.
- Bake oatmeal cups until firm to the touch and cooked through, 20-25 mins.
Recipe Tips and Thoughts
- Oatmeal cups have quickly become my favorite breakfast for a few reasons. They’re really easy to make—all you do is throw your ingredients into a bowl, mix, and bake. They’re also easily adaptable; you can add any ingredients you like for the main flavor base and then add any boosts like protein powder.
- Feel free to adapt these Healthy Strawberry Banana Baked Oatmeal Cups any way you like. You can easily make a big pan of baked oatmeal instead of cups by baking the batter in a large pan instead of the muffin tin. Whatever way you make these, I hope you enjoy!
- They’re great for breakfast, but they also make nice snacks! We usually snack on them all day, and my (almost) 2-year-old always wants more.
- They are vegan and can be made gluten-free with certified gluten-free oats.
- They’ll last in an airtight container in the fridge for about five days and can be frozen in the freezer for a few months.
I hope you’re having a cooler summer than we are! We’re in the middle of a two-week run of triple-digit temperatures, and it isn’t fun at all. I think we’re supposed to get some rain the next few days, though, so hopefully, it will cool things off!
