It’s Taco Tuesday!!!  Because we really need another excuse to eat tacos, right?!  Well, just in case you do need an excuse to eat them, adding miso and citrus marinated tofu to your taco is the best.excuse.ever.  I also topped these with my Creamy Rainbow Asian Slaw from last week, just to make them doubly delicious!

I know some people have mixed feelings about tofu, some think it has strange texture while others think it has a bland taste.  But I assure you that after you let this tofu sit for an hour in this miso citrus marinade it will be packed with tons of flavor and nobody will be calling it bland.  And, if you use the firm tofu, the texture will be just right. 

Now, about this marinade!  I usually just saute my tofu with some olive oil and tamari but taco time calls for something really special.  I whisked together some miso, orange juice, lemon juice, ginger and a few other ingredients and then let the tofu sit in the marinade until it soaked up all the flavor goodness.  Then I just sauteed it up in a pan to give it a nice crispy texture and it tasted so good!

While I do love the traditional Mexican style taco with beans, cheese and salsa, one of my favorite things about tacos is that you can pretty much stuff them with anything and everything you like.  Tacos are so versatile and I don’t think I’ve ever met one I didn’t like.  One of my favorite taco recipes is my BBQ Cauliflower & Chickpea Tacos, not very traditional but still so good!

These tacos have a little Asian flare to them and I don’t think you will be missing the beans and cheese at all!  That being said, they still do taste delicious with some salsa and guacamole plopped right on top!  Because, let’s be honest, is there anything in the world that doesn’t taste good with guacamole?  Didn’t think so πŸ™‚

Ingredients

  • 1 –14 oz block of firm tofu
  • 1 dash of tamari, or soy sauce
  • 4–6 corn tortillas
  • Creamy Asian Rainbow Slaw
  • 1/2 cup chopped peanuts
  • Additional taco toppings: avocado, guacamole, salsa

Miso & Citrus Marinade:

  • 1 tablespoon light yellow miso
  • 1/2 teaspoon fresh grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon orange zest
  • 2 tablespoons + 1 teaspoon fresh orange juice
  • 1 teaspoon lemon zest
  • 1 tablespoon + 1 teaspoon fresh lemon juice
  • 1 teaspoon olive oil
  • 1 pinch chili flakes

Instructions

  1. Drain the tofu and pat dry. Cut the tofu into 1/2 inch chunks and place in a medium sized bowl or baking dish.
  2. Add all marinade ingredients into a small bowl and whisk until miso is dissolved and everything is combined. Pour marinade over tofu, cover, and refrigerate for at least an hour.
  3. Heat a large pan over medium heat. Scoop the tofu out of the marinade, with your hand or a slotted spoon, and into the pan. Reserve the leftover marinade. Cook tofu until browned and crispy, 15-20 minutes.
  4. Assemble the tacos by placing the tofu down first and then spooning over a little bit of the reserved marinade, then top with coleslaw and chopped peanuts. Add any additional taco toppings of your choice.

    Yup, tacos are good, period. What a delicious flavor profile for these Izzy! I have become a regular tofu eater since learning how to prepare it. It’s all in the prep and marinating is key! The citrus miso marinade sounds delightful. Piling the slaw, salsa and guac on makes these even tastier.. the more toppings, the better! Love how you’re preparing us for Cinco! Thank you Izzy!!

    These tacos just yell SPRING! Love all the bright and pretty colors. That yellow background is so pretty! I must admit, I’ve only cooked with tofu once before, it was like a sesame oil fried version. It just…didn’t work. And I’ve been hesitant to give them a try since. But you’ve completely inspired me to give them another go!

    I’m cooking tofu for the first time and searching for recipes. This sounds and looks great! Just an FYI, real Mexican tacos do not have beans and cheese. That’s taco bell American tacos.

    We just made these for today’s main meal. The timing of the tofu marinating along with the prep of the slaw ingredients was very convenient! The tofu had a nice citrusy kind of flavor, but we weren’t super gung-ho on the flavor as a taco. The slaw however, was nice on its own.
    So, we mixed together the leftover cooker tofu cubes with the leftover slaw for leftover, thinking that we might prefer the mixed flavors in a non-taco setting β€” I’ll pop back to report. If that’s more to our liking, I’ll change out my saved recipe to just be a Citrus Tofu Slaw Salad. πŸ™‚

      Okay, so we had the leftovers all mixed together. I think I just don’t care too much for the flavor of the dressing. I’ll carry forward the veggie blend ingredients to use in our future slaw mixes, but not this particular recipe for the meal or the dressing.
