So, I feel like I should be posting a bunch of holiday recipes right now, but I’ve just been over here eating these Easy Chickpea and White Bean Salad Sandwiches for the past week. Sometimes, I come across a recipe that’s so easy and so tasty that I binge eat it for longer than I would like to admit. But when it comes to these sandwiches, I don’t think there’s anything wrong with that!
I’ve been all about the quick and easy meals these days, and these sandwiches fall right into that category.

Easy Chickpea and White Bean Salad Sandwich Recipe Ingredients
- Beans – I used one can of chickpeas and one can of white beans. I drain and rinse both.
- Mayo – Both vegan and regular mayo work well in this recipe.
- Dill pickles
- Vegetables – These sandwiches call for diced carrot and radish, as well is chopped red onion.
- Spices – I used Old Bay seasoning, which gives these that amazing tuna vibe, salt, and black pepper.
- Bread – I used bagels, but you can use your bread of choice, and of course, gluten-free bread, if needed.
- Optional toppings – Great topping options include lettuce, tomato, avocado, onion, and sprouts.
How To Make These Vegan Tuna Sandwiches
- Place the chickpeas and white beans in a medium-sized bowl and mash with a potato masher until you have a slightly creamy mixture that still has some whole beans.
- Add the remaining ingredients to the bowl and mix until combined. Serve on bread with desired toppings.

Loved this recipe.
Truly didn’t expect it to satisfy my tastebuds, but it surprised me. The tartness from the dill pickles, the flavors all melded together very well. I did not use salt but used the nami shoyu salted japanese vinegar. I am trying so hard to go vegan but many times the flavors are not satisfying my taste buds. I was very much pleased as well as satiated for hours. Will make this again.
