Greek Chickpea Salad Sandwiches-3013

These Greek Chickpea Salad Sandwiches are one of those meals that you make once and realize how easy and delicious they are that you can’t fathom why you have never made them before.  Seriously, they are so easy and delicious!

Now, you all know that Mexican food is pretty much my favorite food ever, but next to Mexican food is definitely Greek food.  I love hummus, kalamata olives, and pretty much everything in between, especially the wine!  Greek food is so great because it is always light, refreshing, and really flavorful.  Whenever we go to our favorite Greek restaurant I always order a salad that is pretty much as big as my head and I manage to eat the entire thing without feeling completely gigantic afterwards.

The main binder in these chickpea salad sandwiches is tahini, which is pretty much liquid gold in my book.  One of my favorite things to eat is a big bowl of roasted vegetables, quinoa, and a huge drizzle of tahini over top.  It has a such a great nutty flavor while also adding a delicious creamy texture.  If you ever make a dish and wonder what it might be missing, a big drizzle of tahini might just be the thing!  I am pretty confident when i say that these chickpea salad sandwiches will soon be your new best lunch buddy πŸ™‚

Ingredients

  • 3 cups cooked chickpeas
  • 7 tablespoons tahini, a little less than 1/2 cup
  • 1/2 heaping cup chopped cucumber
  • 1/3 cup chopped kalamata olives
  • 3 tablespoons chopped red onion
  • 1 1/2 tablespoons chopped fresh dill
  • 1/2 cup chopped artichoke hearts
  • 1 clove garlic, minced
  • 1/2 cup chopped red pepper or roasted red pepper
  • juice of 1/2 a lemon
  • 3/4 teaspoon salt
  • 1 pinch black pepper
  • Bread, gluten free if necessary
  • Optional toppings: lettuce, tomato, sprouts, pickles

Instructions

  1. Place chickpeas into a large bowl and mash with a potato masher until most chickpeas are mashed. It is ok to leave a few chunks.
  2. Add all remaining ingredients to the bowl and mix until everything is combined. Pile chickpea salad on bread and top with your favorite sandwich toppings.

    I’m seeing some of these sandwiches in my lunch future! I think I might be tempted to add some feta, too, but then obviously they wouldn’t be vegan any more.
    I have a huuuuge pot of tahini in my cupboard that I brought back from Greece that I keep meaning to do something with – I could definitely start with this!

    I love the idea of chickpea salad sandwiches!! So much better than tuna or egg salad! Chickpeas are so versatile, you could do all kinds of flavor combos. I’m partial to Greek flavors, so this one sounds especially great!

    This looks very yumm… However, I’m not crazy about olives; black olives are fine w/some things. So, are the olives a make it or break it, on the flavor?

      Thank you! You can definitely leave out the olives and it will be just as good! You might need to add a little more salt though because the olives do add some salt to the chickpea salad. I hope you enjoy it πŸ™‚

    This looks delicious, I am going to make this for dinner tonight, as we are all eager for lighter eating these days! I am in the process of converting myself and my girls to a mostly vegan diet… but it is along road. My oldest, whom is 14…has recently decided she wants to be a vegetarian and work her way toward vegan. I honestly would love to do the same, but struggle finding recipes with enough flavor to substitute for other dishes. I also want to make sure we are being healthy, and receiving the nutrients we need. So, what would be your go to cross over recipes, for those whom have been raised meat eaters for a few decades? Keep in mind I have to please a five year old and a very skeptical husband!

      Hi Tiffany! Yah! I hope you and your family enjoys them! It can definitely be hard to migrate to a full vegetarian diet and I imagine even harder to go vegan! I do still eat dairy every once in a while, but try not to eat it too much. Pasta is a favorite at our house and I like to bulk it up by adding lots of fresh vegetables. I also cook with a lot of whole grains and beans so that the food is still filling even though there isn’t any meat. And my favorite secret to flavorful vegetarian dishes is to add lots of spices and fresh herbs! They give so much flavor!

    Can’t get artichoke hearts, and I hate olives and black salt.
    I have the rest in and am raring to go with some nice bread so what do you think? Go as is or add a little something else?
