Why You’ll Love These Easy Roasted Sweet Potatoes
- Easy to make – You only need a few ingredients to make these cozy roasted sweet potatoes. The sweet potato gets tossed with oil and spices (that you probably already have on hand) and then roasted to perfection in just about 30 minutes.
- Versatile – My roasted sweet potato cubes can be used in so many different recipes. I like to add them to salads, pasta, wraps, Buddha bowls, and more. They add a nice sweetness that goes well with so many other ingredients, including: black beans, veggies, cheese, eggs and grains.
- Hearty and filling – I love having a container of these roasted sweet potatoes on hand so I can add them to meals throughout the week. They add bulk to every meal, which will help fill you up and give you energy that lasts.

Why We Love Sweet Potatoes
Sweet potatoes are high in potassium and magnesium, which help reduce blood pressure and stroke risk and can lower cholesterol. They are also packed with notable amounts of fiber and vitamins A, C, and B6. These nutrients help build immunity and reduce inflammation, among many other benefits.

Roasted Sweet Potato Recipe Ingredients
- Sweet Potato – You can use any color of sweet potato that you like for this recipe. You can decide whether you want to peel them or leave the skins on. If the skin is thick, I usually peel it off, but tend to leave it on when it is pretty thin. Regular potatoes can also be used, if needed, although they will have a different taste and texture.
- Olive Oil – I usually roast all of my vegetables in olive oil, but almost any type of oil can be used.
- Spices – I like to season my roasted sweet potatoes with salt, pepper, cumin, paprika, granulated garlic and onion powder. Feel free to add extra spices if you wish. Cayenne pepper or chili powder will help add some spice, if that is something you want.

How To Make Seasoned Roasted Sweet Potatoes
- Preheat oven to 450 degrees F. Wash sweet potatoes well and then you can peel them, if desired. Otherwise, keep the peels on and dice them into bite sized pieces. It doesn’t really matter what size they are, as long as they are all similar sized, so they cook evenly. Place the diced sweet potato on an extra large baking sheet.
- Add the olive oil, paprika, cumin, onion and garlic powder, salt and pepper on top of the diced sweet potatoes and use your hands to toss everything together until the diced sweet potatoes are evenly coated with the oil and spices. Arrange them in a single layer on the sheet pan and then place in the preheated oven and bake until fork-tender and just starting to brown, 30-40 minutes.
- Remove from the oven and allow to cool for a few minutes before using. My seasoned roasted sweet potatoes can be enjoyed as a side dish or added to lots of different recipes, including salads, tacos, pasta, Buddha bowls, and even breakfast bowls.
