An easy and delicious healthy no cook vegan meal!

Guacamole Pita Pizzas- A delicious and easy 20 minute vegan no cook dinner that is packed with lots of healthy vegetables!

Happy August!  August just happens to be my favorite month of the year because tomorrow is my birthday 🙂  And, my mom is getting here today so I’m extra happy!  I’m also pretty excited about these Guacamole Pita Pizzas.

Ever since I made these Mediterranean Chopped Salad Pitas I’ve been kind of obsessed with quick and easy no cook meals that involve pita bread.  And, it doesn’t hurt at all when they also involve avocados.

Guacamole Pita Pizzas- A delicious and easy 20 minute vegan no cook dinner that is packed with lots of healthy vegetables!

This recipe is really simple and easy, but also delicious and fresh.  It’s loaded with veggies and also has a little protein from the black beans.  And, who doesn’t like avocados?!

Description

A delicious and easy no cook vegan dinner!


Ingredients

  • 2 large avocados
  • Juice of 1 lime
  • 1 clove garlic
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt, or more if desired
  • 4 large pitas
  • Suggested toppings: black beans, corn, tomato, radish, cilantro, jalapeño, hot sauce, nutritional yeast

Instructions

  1. Add avocado, lime juice, garlic, nutritional yeast, cumin and salt to a food processor and blend until smooth, about 1 minute.
  2. Spread 1/4 of the guacamole onto each pita (you can use more or less if desired) and then top with your favorite toppings.

*Not all recipes are vegetarian but some can be easily adapted

      It’s a deactivated yeast that has a nice cheesy nutty flavor. A lot of people use it in vegan cooking for a nice cheesy flavor. You can easily omit it form this recipe though and it will still taste good!

    Ever feel like you’re beat up by the world? Solution: make this beautiful and healthy meal for yourself. I sat down and looked at my plate with this incredibly colorful and delightful food looking back at me, knowing I am doing something good for myself. I forgot the lime and cumin, well, I made it somewhat differently: spread warm refried beans with black beans and corn then loaded my whole wheat half pita with avo, radishes and halved grape tomatoes . There was also some sliced cukumber and a little dip. I feel so much better.

    Well, another little masterpiece…. or two, inspired by Izzy’s recipe here. You know, the best thing about this recipe is that she doesn’t lock you into a set of ingredients. You are free to make your own style and add whatever you want, that is on hand. I, for instance this time, just happened to have some Avocado Ranch dressing leftover from a recent salad so I just added the Cumin, lime and Nut. Yeast. I spread some organic refried beans onto two whole wheat sandwich thins then topped with organic black beans and corn then drizzled the dressing over them and added avocado and cucumber. I feel truly inspired. ????

    I want to make this for group, but it will have to set for a couple of hours. will the pita get soggy if I make it 1-2 hours ahead of people eating it? Thanks!

      I Diane, hmm, guacamole typically doesn’t do well when it sits out for a while so I’m not sure if it would work super well to make it 2 hours ahead of time. I don’t think it would get too soggy but I’m just a little worried about the guacamole getting brown. It might work if you covered it with plastic wrap and made sure to keep it cold though 🙂

        If you add a few drops of lime to the avocado, or anything really (works for apples, and others) it will prevent the brown coloring. Any, like she said, keep it cold.

      My pita was pretty soft so I didn’t cook it but it would work great too if you wanted to crisp it up a little bit! I actually already have a hummus pita pizza recipe on here! You can find it here 🙂
