Healthy Vegetarian Meal Plans- easy and flavorful meals for every night of the week! Prep ahead tips + vegan and gluten-free substitutions!

Like usual, Saturday just crept up on me and I almost forgot to share this post with you guys!  It’s February now and depending on where you live, we don’t have much of winter left.  And, if you live where I live, it’s pretty much over.  I got  sunburn when I was on a hike the other day and it wasn’t one of those sunburns they claim you can get on a cloudy day (I’m still not sure I believe that!)

I know that most places aren’t like Arizona though, so we have some really delicious comfort food dishes for you all this week!  My mouth is watering just looking at them.  I hope you all have a wonderful weekend and enjoy the Superbowl, if that’s your thing :)

It’s that time again, time to start planning what you are going to eat for the week.  Is it just me or does it sometimes feel like dejavu?  Another day, another meal to cook.  Before I started this blog I’m pretty sure we ate the same boring things over and over and over.  But these days I try to mix it up a little more with all the new recipes I make to share with you, although the thought of hiring a personal chef does sound pretty tempting some days!

I hope that you all are getting some good inspiration and meal rotation from these meal plans, I know I am!  We’d also love to know if you have any suggestions or feedback you want to share.  We love putting these together for you each week and hope that you all love them too!  Have a wonderful weekend :)Continue Reading

My mom is visiting this week!  Ever since I went off to college I have never lived very close to my family, I’ve always been at least a few days drive away.  When I was younger it was exciting to be out west on my own, but as I get older it makes me a little sad.  I have a 6 month old and I would really love him to grow up having a wonderful relationship with his grandparents.Continue Reading

Happy weekend, friends!  It’s been rainy and gloomy here for the past few days and I’m really enjoying it.  I love rainy days when I don’t have anywhere important to be and I can just cuddle with my 6 month old and orange tabby all day long.

A few days ago we ventured into the high mountains and got to see some snow!  It wasn’t too cold and it was perfect snowman building snow so we had a lot of fun.  I don’t realize how much I miss seeing snow until I get to play in it.  I’m thinking of going back up today!  I hope you all have a wonderful weekend and enjoy the recipes we have for you this week!Continue Reading

I’ve developed this terrible habit where I can’t just eat a regular garden salad anymore.  I feel the need to put like 1,000 different ingredients into the salad to make it into a salad that I could eat for a meal.  I think I just love salads so much that I need to come up with an excuse to eat them for lunch and dinner!Continue Reading

Healthy Vegetarian Meal Plans- easy and flavorful meals for every night of the week! Prep ahead tips + vegan and gluten-free substitutions!

Does anyone else feel like these weeks are just flying by these days?  I’m pretty excited it’s the weekend already though.  My little one has finally deemed the baby carrier acceptable and now we can go on longer more exciting hikes, rather than the two stroller friendly hikes we were doing.  It feels so freeing and I’m so happy that our dude likes to hike just as much as we do!

It’s supposed to rain a little bit this weekend, but I’m hoping we can get out and enjoy the cooler temps!  I hope you all have a wonderful weekend and enjoy the recipes we have for you this week!  As always, there are some very delicious choices :)
