Not only are pulses nutrient dense ingredients that are packed with important vitamins and minerals, they are also a good budget friendly ingredient to add to your recipes. With grocery prices on the rise, especially with meat, it is a great time to start adding more pulse ingredients to your diet, including beans and lentils. These days, there’s a lot of talk about the importance of protein and fiber in our diets, and luckily beans are high in both of those. I hope that with this post, I can encourage you to make some of these healthy recipes that all contain pulses.
WHAT ARE PULSES?
Pulses are the edible, dried seeds of plants in the legume family. This includes lentils, chickpeas, dried peas and beans. The difference between pulses and legumes, is that legumes also include seeds that are not dried, like fresh peas and edamame. All pulses are legumes, but not all legumes are pulses. Pulses are nutrient dense foods that are high in protein, fiber and other essential vitamins and minerals. As a vegetarian, I use them often in my recipes, as you probably have noticed if you are a regular reader.
